I might suggest using the higher shelves for the newer canned items. Lower shelves are for the oldest stuff and when meal planning look at the lower shelves and plan your meals around what you need to use up first.

I think I saw box mixes, pasta etc. with your home grown onions and potatoes. I would be afraid of mice and bugs getting in my garage to get to the food. How do you combat that? Thanks.
@@jgjg3848 Great question. We are new to putting boxed stuff out here. Well .. new ish. We had mice tear into flour and other stuff. They have not touched pasta. But, We are working on getting enough containers to possibly even stack totes full of stuff and HOPEFULLY keep all those critters out. And I don't think you saw that stuff in the garage, But maybe on the shelves at the very end by the stairs. But ... the garage is only a couple feet away and your worries are very much correct!
You don't need wood to secure your bottles. Just several eye bolts, and a good quality wire would work just as well. Or the safety mesh, and eye bolts. My husband uses the mess at work on shelves for their computer equipment on shelves for eaethquake protection. By the way nice job on stocking your pantry with canning!!
Just tried the Harvest Guard lids this year - love them! Definitely different, and a little learning curve, but I don't want to ever be without lids as a lot of people were this year. I only had 1 unseal during storage. Highly recommend!

Have you ever tried pickled eggs with pickled beet juice(from the canned pickled beet juice) If you need you can add a little extra vinegar, water, and sugar.OMGosh they are great!
Nothing like a well stocked pantry, with home canned foods, well done. I grew up in a canning family so I've done this all my life, and have passed it on to our children. They don't can as much as we do but they can every year as well. I'm usually canning something every month, winter time I can dried beans and peas (for those quick meals) and any meats I find on sale, or course fall and summer is filled with canning, nearly every day from our gardens and making room in the freezers. I was so glad I always keep a stock of canning lids, last year we never saw the first box in any store.

Lol right. I thought I explained in video (but maybe I edited it out). Normally we do our pantry tours at the end of Dec. We did 2016, 2018, 2020 (this one). We decided to do this one in between our Canuary videos though. So it was like 19 days past 2020 😁. And everything in there was canned in 2020 or before (except maybe 1 thing .... Maybe ... But Jeni and I couldn't remember what). So it is basically a 2020 review ......
Don't pull the OSB off to check for insulation. Just drill a few small holes and fill them in with sawdust and glue after you check. This looks like a layout that will provide well for many years. Well done ! - KJ

We don't cool this area in the summer nor do we heat it unless it drops below 30 (which is rare) then we put a small heater in here on low as as possible to help.

Do you consider beans and peas to be better canned or frozen? When you open canned beans/peas, the entire bottle will have to be used in a few days right?
With our family .. an entire jar (quart) is 1 meal. I'm kinda indifferent on the green beans ... But I do like frozen peas better. I like canned peas just fine .... But like frozen better. In fact, there are probably alot of veggies I prefer frozen ..... But like canned just fine. So, we are always try to keep the freezes empty, and shelves full 😁

Why not just store the jars in plastic boxes on the ground well labeled and have 2-3 of each out on the shelf? much safer. Awesome variety, got some ideas.
I usually start out with a double batch of Applesauce and can half of it. Then transfer the balance of Apple Sauce to my large slow cooker, add Cinnamon & Nutmeg and let it cook for 6-8 hrs on low, stirring occassionally. When thick enough for Apple Butter, I can that up. For Lazy Apple Pie bakers like me, I toss my sliced apples with a 1/4-1/3 cup of flour, a jar of Apple Butter, mix it, toss it in a pie shell, top and bake. For a richer & heartier Apple Pie, I add Walnuts and/or Raisins. Mmmm!
This is my first time watching, It would be nice to know why you don't like goat meat or hamburger chips. It looks like your food storge is in the garage. How do you keep it cool during the summer months?
I (Mike) do like goat meat. And so do the kids really, Jeni's hang up is more psychological 😂. As far as food storage this room is kinda of a walkway on the way to the garage. It does get warm in the summer but it's fine. All the seals hold. But this is a north room, concrete floor, little sun on this part of the house so it actually stays pretty cool (relatively speaking).

Between 50 and 70 degrees. This is where our pantry is most of the year. For a little while in the winter it is colder. And a little while in the summer it is warmer. nchfp.uga.edu/how/store/store_home_canned.html
I agree. but when we started all we bought was regular ... so now we are staocking up on wide mouth as well ... or ... to be honest we are stocking up on whatever stores have!
Pantry is not heated or cooled. It stays a little warmer in the winter than the connected unheated garage. If the temps get down to 30 or so in the pantry I will put a very small space heater out there. That usually easily heats it up to the upper 40s or even into the 50s. Get pretty warm in here in the summer sometimes. No AC in here. But the 2 outside faxing areas are East and North ... So it doesn't get much sun on the outside which helps keep it a little cooler.
Self-sufficient .... No. Probably not close lol. But we are doing more and more each year ... So we are getting there. We do have a large garden. And we do raise alot of animals for meat, milk, and eggs. In fact, generally speaking, we have not bought meat in a grocery store in like 3+ years (or course there are some exceptions).

Hello...new subscriber here....I thought home canned good were only good for one year....some of your items are much older than one year. How long can you safely keep them?
Thanks for subbing! It's true most recommendations are for a year. It also would depend on your comfort level. We have been canning for awhile and feel fine leaving things in the cans longer than a year. The only real safety issue is if the seals are broken. But if the seals are good, the food should be good. That is how we look at it. While some texture and may nutrients may be affected by longer shelf time .... it should still be safe.
I'd love feedback on Harvest Guard with Canning meat. I am having issues wit Tattler lids coming unsealed weeks after canning meat. I have both Tattler and Harvest Guard lids.
@@PrattFamilyHomestead I always wipe my rims with white vinegar. Leave a 1 " headspace and follow all instructions. They will seal ..I check jars on a regular basis. And a few days and sometimes weeks later some will be unsealed. I put a question on Canners using Tattler lids on Facebook and several responded they have the same issue. I am done using them for canning meat. I do think Tattlers are a bit thicker than Harvest Guard. They are very similar. Since I have both brands I am going to use Harvest Guard for the next foods I can and see if I have better results. This is my first year using the plastic lids.
@@cathiegolding6473 Oh I didn't mean you weren't cleaning the rims. Sorry. I meant more like juices and stuff escaping during the process. Maybe the possible grease residue doesn't do well with the reusable lids and does better with the "normal" lids.

Thank you for subbing! We really appreciate it! We actually have more temp fluctuation in here than most people would like .... But ... We really haven't had many problems at all. It can get up to 85-90 in here I think. But only if it has been blazing hot for days outside. I've almost thought about a small AC unit to keep it more at 70 max .... But again ... We haven't really had any problems.
I want to can but I have a glass top stove and the salesman said to not use cast iron or can on it. We couldn't get gas because our stove failed and we HAD to get one right away. I see you also have a glass top stove, are there any tips to prevent the top from breaking since that was his point against doing those things. Thanks! I wish I had cold storage but NC isn't that cold year round.
I have been canning on my glass top stove for 9 months. I was not aware till recently that I really should not. I will still can on the glass top very carefully. I watched a few videos about using iron skillets. As long as I heat the skillets on low then use higher heat then it will be ok.l love my iron skillets 😍
Gail. Double check the owners manual. Ours clearly states that canning is ok for it. The owners manual stays to make sure the canner is evenly centered on the burner. I would say .... If the owners manual says don't .... Then don't risk it. If it says it is fine .... Then just follow what it says.
I’ve canned and used cast iron on 2 different glass tops (the first one didn’t break, we just moved). I was just alway careful to set them gently on the stovetop. And I didn’t move them around.
Don't tell the kids but chicken soup with rice is called chicken and rice soup ;) Like Campbell's Chunky, your chicken and rice is so thick you can eat it with a fork. Amazing that you have 4 kids and NONE of them like soup?!?

I reuse lids. If you are nervous about it, it surely wouldn’t hurt water.
We keep all our lids in case we have to reuse them. But we have never needed to.

Bantam. We did have quail but got rid of them last year.
I fid a boat load of peas in 2020 and only canned 12 pints. My niece ate off of them every single day as they came in.

I usually start out with a double batch of Applesauce and can half of it. Then transfer the balance of Apple Sauce to my large slow cooker, add Cinnamon & Nutmeg and let it cook for 6-8 hrs on low, stirring occassionally. When thick enough for Apple Butter, I can that up.
For Lazy Apple Pie bakers like me, I toss my sliced apples with a 1/4-1/3 cup of flour, a jar of Apple Butter, mix it, toss it in a pie shell, top and bake. For a richer & heartier Apple Pie, I add Walnuts and/or Raisins. Mmmm!

This is my first time watching, It would be nice to know why you don't like goat meat or hamburger chips. It looks like your food storge is in the garage. How do you keep it cool during the summer months?
I (Mike) do like goat meat. And so do the kids really, Jeni's hang up is more psychological 😂. As far as food storage this room is kinda of a walkway on the way to the garage. It does get warm in the summer but it's fine. All the seals hold. But this is a north room, concrete floor, little sun on this part of the house so it actually stays pretty cool (relatively speaking).

What size jars are the peaches in? I thought quart size was the largest size approved for canning? How do you know how long to process them?

What are the perfect temperatures to store our canning products?
Between 50 and 70 degrees. This is where our pantry is most of the year. For a little while in the winter it is colder. And a little while in the summer it is warmer.

I agree. but when we started all we bought was regular ... so now we are staocking up on wide mouth as well ... or ... to be honest we are stocking up on whatever stores have!
Do you cool the pantry or is it cooled by the weather?
Pantry is not heated or cooled. It stays a little warmer in the winter than the connected unheated garage. If the temps get down to 30 or so in the pantry I will put a very small space heater out there. That usually easily heats it up to the upper 40s or even into the 50s.
Get pretty warm in here in the summer sometimes. No AC in here. But the 2 outside faxing areas are East and North ... So it doesn't get much sun on the outside which helps keep it a little cooler.
I dont blame anyone on the peas. I grew peas this year and only got to cook them once. The rest were eaten off the vine by me and my neighbour.

Self-sufficient .... No. Probably not close lol. But we are doing more and more each year ... So we are getting there. We do have a large garden. And we do raise alot of animals for meat, milk, and eggs. In fact, generally speaking, we have not bought meat in a grocery store in like 3+ years (or course there are some exceptions).

Hello...new subscriber here....I thought home canned good were only good for one year....some of your items are much older than one year. How long can you safely keep them?
Thanks for subbing! It's true most recommendations are for a year. It also would depend on your comfort level. We have been canning for awhile and feel fine leaving things in the cans longer than a year. The only real safety issue is if the seals are broken. But if the seals are good, the food should be good. That is how we look at it. While some texture and may nutrients may be affected by longer shelf time .... it should still be safe.
I'd love feedback on Harvest Guard with Canning meat. I am having issues wit Tattler lids coming unsealed weeks after canning meat. I have both Tattler and Harvest Guard lids.
I have not canned meat yet. But probably will very soon. I wonder if grease affects them more than metal lids?
@@PrattFamilyHomestead I always wipe my rims with white vinegar. Leave a 1 " headspace and follow all instructions. They will seal ..I check jars on a regular basis. And a few days and sometimes weeks later some will be unsealed. I put a question on Canners using Tattler lids on Facebook and several responded they have the same issue. I am done using them for canning meat. I do think Tattlers are a bit thicker than Harvest Guard. They are very similar. Since I have both brands I am going to use Harvest Guard for the next foods I can and see if I have better results. This is my first year using the plastic lids.
@@cathiegolding6473 Oh I didn't mean you weren't cleaning the rims. Sorry. I meant more like juices and stuff escaping during the process. Maybe the possible grease residue doesn't do well with the reusable lids and does better with the "normal" lids.

New sub here! What an amazing pantry you have built. A LOT of work represented there. Curious what the temperature is out there during the summer? We are relocating to Missouri from California and I'd love to have a room like that for my pantry, but unsure of the summer temps. Do you have air conditioning in there? TIA!
Thank you for subbing! We really appreciate it! We actually have more temp fluctuation in here than most people would like .... But ... We really haven't had many problems at all. It can get up to 85-90 in here I think. But only if it has been blazing hot for days outside. I've almost thought about a small AC unit to keep it more at 70 max .... But again ... We haven't really had any problems.
Do you have a recipe for the red hots apples?
I am pretty sure the recipe came out of the ball book. I would have to double check ....

I want to can but I have a glass top stove and the salesman said to not use cast iron or can on it. We couldn't get gas because our stove failed and we HAD to get one right away. I see you also have a glass top stove, are there any tips to prevent the top from breaking since that was his point against doing those things. Thanks! I wish I had cold storage but NC isn't that cold year round.
I have been canning on my glass top stove for 9 months. I was not aware till recently that I really should not. I will still can on the glass top very carefully. I watched a few videos about using iron skillets. As long as I heat the skillets on low then use higher heat then it will be ok.l love my iron skillets 😍
I have canned in a glass stove before. It may not be “ recommended” but you definitely can.
Gail. Double check the owners manual. Ours clearly states that canning is ok for it. The owners manual stays to make sure the canner is evenly centered on the burner.
I would say .... If the owners manual says don't .... Then don't risk it. If it says it is fine .... Then just follow what it says.

I’ve canned and used cast iron on 2 different glass tops (the first one didn’t break, we just moved). I was just alway careful to set them gently on the stovetop. And I didn’t move them around.

Don't tell the kids but chicken soup with rice is called chicken and rice soup ;) Like Campbell's Chunky, your chicken and rice is so thick you can eat it with a fork. Amazing that you have 4 kids and NONE of them like soup?!?
YES! :) In fact usually when we make it like that there is next to no liquid :)
