I wish they did more distinct foods. Yes, beef patty=Jamaica, but the smashed green plantain isn't uniquely Haitian nor is the beans and rice uniquely Belizean. So, the contestants could said other countries and technically not be wrong. I also think if they were to do a pt. 2, use people who have had Caribbean food so they'll actually have a chance at getting it right. Getting people who've rarely or never eat it doesn't really add to the premise.

It's so sad to me that people have such a limited knowledge of Caribbean food. It's very clear it hasn't "arrived" like I thought. Every country has similarities but still very distinct and unique dishes and desserts. West coast Caribbean people, y'all don't have restaurants or invite friends over to try run down, bake and saltfish or provision? This just confirms NY is home forever just based on the food accessibility.

The producers are the ones needing a cultural knowledge of Caribbean Islands foods, fruits, cuisines and how each are made based on the Island traditional methods; i.e., plantains are widely cooked, fried, baked, smashed, etcetera ..
Before inviting contestants to guess any Caribbean Islands dishes
There are green, yellow, overly ripen plantains, moreso the different varieties
Last, the plantain can also be from Dominican, Granada and parts of Jamaica, maybe other islands to how they are exact in their preparation, minus the oil used and the seasoning on it
Plus is it crushed or smashed using a fork only or placed in its skin and pressed, or maybe a tortilla empanada presser equipment

I would like to say that oxtails isn’t strictly a Caribbean thing. It’s more about how it’s prepared that makes the difference. My family is mostly from Alabama and my great grandmother on my dad’s side used to make it a lot. She was born in late 1800s and never visited the Caribbean. My family still cooks oxtails but not as much because of the expense. But it is also a traditional dish for Black Americans. 😊
