    Instead of taking the plate setter out, could you just open up the top and bottom vents to get the temp out, and put a cast iron skillet on the egg to get a good sear? I know you won't get the direct heat with the plate setter on, but I would think the skillet would help achieve the same end.

    I live on the central coast where Santa Maria BBQ and Tri-Tip are king. Traditional here is Garlic Salt and Black Pepper and then cooked over Red Oak on a Santa Maria Grill(hardwood and grill grates are adjustable height). I have a BGE and Santa Maria. on the BGE I do the reverse sear method as well but the results are always better on the Santa Maria if you ever have a chance to try it.

    Nicely done! All the butchers in my area keep calling the top sirloin cap the tri-tip. The cap is mighty tasty and looks like I've got to try the tri-tip now.

      What they're selling you is actually called culotte which is where the bottom sirloin and bottom round meet. Based on what you said you are not from CA because here tri tip is more common than water lol

    Need to show more about how ya load the egg (charcoal vs wood chunks) and discuss types of woods used and why. Otherwise, good luck with the channel. Good so far.

    You look like you were feeling very little pain...or anything, for that matter...at the point you were getting ready to sear that TT - haha. Now I feel like I need to go find me some of that Angels Envy, or revenge, or whatever it was called.

    Great video. I don’t think u can get wall to wall consistency like that with out reverse searing. Will definitely try the washursister sauce next time.

    Smoke is way too heavy... try thin blue smoke... less bitter... otherwise good video

    1. shake the worcestershire(as it settles) and 2. perhaps a bit less whiskey ... slur your words and lose credibility
