Hi Pasquale, I'm happy to see some more recipes for zucchini because I am harvesting a dozen or more daily and need more recipes. I tried your zucchini pancakes which were fabulous, I also already make a breaded zucchini chips recipe, made them layered and breaded like eggplant parm and would like to try something new. This looks like a winner but I am also going to try something cool and light for the summer with a sweet balsamic vinaigrette , basil , little Sicily tomato and Mozzarella di Bufala . Something refreshing for the summertime!

That with lightly toasted slices is Sicilian bread would be very nice
I do the same thing with eggplant, basically just substitute the vegetable slices for lasagna noodles. 👍

Omg so Delicious that I’m going to try. I made zucchini Parmesan instead of using eggplant. I use zucchini and it was absolutely a hit out of the park so I just enjoy watching you so much I’m gonna tie into an Italian. I love you and I get it.❤

With eggplant it comes even better ! It comes a kind of “parmigiana di melanzane” (eggplant parmigiana). We here in Italy use to make it a lot.
