Yeah thats a cool trick, works with salads too
You can also use inexpensive pieces of foam that are made for floral designers. They come in a myriad of shapes: globes, half-globes, squares, rectangles, etc. And you can use a knife to cut them to fit your need. I find mine at Dollar Tree stores in the USA, but depending on where you live in the world, you may need to seek out a different source. The advantage of floral foam is you can insert pins or bamboo skewers or toothpicks to hold food in place.
