Check if you have other apple watches backup on your iphone, if so you need to delete them. go to settings on your iPhone. Then general > usage > manage storage > find where the apple watch app is and select it. You will then see all of your Apple Watch backups and choose what ones you would like to delete, or delete all and start over.
So what I ended up finding out about the watches that they lost the update so it needed to be re-updated again you need to send it to Apple Apple charges you almost $200

Once i got my new phone the apple watch series 7 the wanted to do a Huge new update and it did. I could not get the two to pair and worked on it for two days and watched numerous video's and Nothing worked... Until i came across yours! The very last tip about going to the iCloud and erasing the watch! Once it was erased the watch immediately started back up and wanted to pair with my cell. In fact a pop-up on the cell said use this phone to assist in setting up your New Watch. I went thru all the commands and now it works perfectly! Tip: only do this when you have access to your watch charger plugged in! I started this at work to erase and it stopped halfway thru because i didn't have it. as soon as i got home and put on charger it finished the Erase and new updates and pairing! Thanks so much!

I had to remove it from my account and restart both devices. It worked for me. It said it was connected at first, but my contacts and music would not sync. After restarting my phone ( just updated beta firmware) and it started working once I paired the phone and watch together.

problem solved ! went to an apple store and they managed to reset the iPhone by using DFU mode and some other software apparently, I then restored a backup and successfully paired my Apple Watch !!!!

Removing all back up and pairing manually worked for me with a series 1 watch and 13 pro phone

I bought a brand new watch series 6 2 weeks ago and I won't pair with my iPhone XS ... it works perfectly when I try pairing it to an iPhone 7 or iPhone XR so I think the problem comes from my iPhone... and now the series 2 I used to use before won't pair anymore... all devices are updated to the last firmware. kinda lost, apple support doesn't know either where the problem comes from
problem solved ! went to an apple store and they managed to reset the iPhone by using DFU mode and some other software apparently, I then restored a backup and successfully paired my Apple Watch !!!!

I REALLY NEED YOUR HELP. I updated my iPhone 11 to ios14 and the Apple Watch app keeps crashing. I unpaired my watch through the watch settings and my phone won’t let me delete the watch app. Every time I try, a message pops up saying “unpair any Apple Watch before deleting app” but my watch isn’t paired anymore. And app still doesn’t let me open it. It’s the watch SE

i have the 3 and I’m trying to pair it to my phone but it says it has to update first but it won’t update because I’m apparently not connected to internet but I am? and it can’t be the watch when I haven’t even set it up yet? It’s insanely annoying
