If you are in a rush, I have summary of steps from the video below
1. Go to settings on the watch
2. Reset the watch - choose “Erase all content”
3. After watch reboots, pair it with your new phone

It’s funny how simple that was to pair my old watch to my iPhone and Apple just makes you sit there without giving you any actual instructions besides press and hold the side button. Thanks man. Apple should be ashamed that we had to learn this from u😂

I cannot thank you enough! I had actually unpaired my cellular Apple Watch from my old phone then paired it to my new phone. Except there was no option to restore it from a backup 🙄. So I had to set it up as a new watch, which wasn’t what I wanted at all. Then I decided to unpair it from my new phone, pair it back to the old phone and restore it from the backup. Which would at least allow me to use it as before as an “independent cellular Apple Watch”. That was about 10 days ago. I finally decided to look for a solution and now you’re my new hero! ❤❤❤

When I hit reset it only says “Erase All content and setting” and “Reset Home Screen layout”
Just select erase all content. You’re only seeing that option because your watch doesn’t have a data line activated

The fact that you have to erase all content settings is just one of many reasons why I don't choose Apple products!
