    I was wondering the best way to fold the bottom of the pie pastry to the top.

    I add the water in the food processor until it just forms into a ball. Quicker and easier. This is the best baking channel. Many thanks for the great, easy to follow recipes and handy tips!

    The apple pear filling sounds delicious. I'm surprised that there isn't more liquid generated when you bake, from the pears and apples. Using plastic when rolling seems like an unnecessary complication - if you very lightly flour your pin, and watch for and remove any butter transfer, the plastic isn't needed.

    Hi can I use a hand blender, can I use this for little potato pies

      You can use this recipe for sweet or savory pies. I wouldn’t use any sugar in the crust for a potato pie. A hand blender may work for incorporating the butter into the flour, but I wouldn’t use it when adding the water. Good luck!

    You can always see the shortening and butter in my pie dough... Is that normal?!

      +Kirsten B Good question. Bigger pieces of fat will generally give you a flakier crust, but if you find pools of melted butter when baking, you may need to cut the butter into the flour a little more (before adding liquid) so that the pieces are smaller.
