just started using a kitchen aid paddle mixer with rubber blades on the outside …. really scrapes down the side of the bowl and means you don’t have to scrape down the sides well at least as much !! i made some shortbread the other week and frankly i didn’t have to scrape the sides at all and they were thoroughly mixed … nice video as always … thank you 👍👍
Love your videos. I’ve made your carrot cake, German chocolate and most of your soups. Your recipes never disappoint. My mom used to make a strawberry shortcake(her term) where she used a cake similar to this one. She used some type of icing that was cooked on the stove and was very white. Are you aware of a frosting recipe I could use that is similar to what I described. Unfortunately I never asked her how she made it.
Back in my day, we just called it a vanilla (or white) cake with butter cream.. always been my go-to cake when you aren't sure what flavor everyone will eat and you want to please everyone at dessert time - and in most homes - vanilla (or white) cake will be eaten by everyone! This cake looks amazing!!
Beautiful! I used your vanilla cake with American buttercream recipe to make a three layer 6” cutting cake for my niece’s wedding two weeks ago. It was a huge hit! It also held up very well on a warm Hawaiian evening.

It always takes me a moment to wrap my head around frosting this way =) Where I grew up, cake was filled with jam, or custard or something chocolaty, decorated with whipped cream and occasionally marzipan (my favourite). Buttercream is generally far too sweet for my palate.

I see you put all three tins in the oven at once, and they appear to be touching. What can be done if you have a small oven that could not accommodate all the tins on one shelf? Would the batter be okay to wait until the first tins have finished baking?

I have that one too but I still like the regular paddle best actually. Might have to give the rubber one another try soon.
I have the same paddle, make sure you check the bottom. It gets the sides well, but not the very bottom of the bowl.
I"ve never found the rubber blade to do much with scraping down the side
