It's so pillowy soft, but still crispy, and also really easy to make. Nothing against Neapolitan, New York, or Chicago, but Charlie's take on Detroit pizza is a winner!

Question: mayonnaise as the fat? Chainbaker or anyone try it? It results in bread as soft as with a tangzhong. I make the same buns/small loaf dough 1-2x/week, and I substituted 1/2c butter for 1/2c mayo. I recommend it as a variant to keep it all exciting. 🙌
