Hi @Minh Carter Just put the knuckle in the oven (top heat) for a short time until it is nicely browned and crispy. Since every oven "behaves" differently, it's best to rely on your eyes (and nose... the crust should not burn 🧐). 🎄🤶🎅
Hoping to find a recipe that would compare to a meal I had in Dusseldorf in 2009. The restaurant was in operation since the 1600s. To my surprise there was lots of venison on the menu, moose elk and deer which you can't get in a restaurant in Montana which seems would be a lot more common here considering we have 3 times the land as Germany and only 1 million people, and wild game is running all over the place. Anyway this meal in Dusseldorf was exceptional, maybe the best I have ever had. Top 3 for sure. Doubt I can recreate it at 1/3 the taste, because you know they had 300 years to refine it but this seems as close to it as I have found. Thank you!
Vegan food is not Guatemalan, though, lol. I spent a 3 1/2 months in Berlin as a summer intern in 1984. Incredible city! The wall was still up. I had so much on both sides of it. The guy has acquired a bit of a German accent, lol.

Use a box cutter knife to score the pork skin. They are VERY sharp and you can usually set the length of the blade to control the depth of the cut.
