The reason it was burned in the center is because the paella (that’s the actual name of the pan) is designed for gas stoves or, even better, wood fire. Probably wasn’t flat enough so all heat concentrated at the centre.
Love Kush's energy here, gave hints to Jamie, more over, took notes from Jamie and conceded to a draw, two things I don't think Ebbers would've done. Also, Jamie's paella was probably the worlds most expensive paella by the time he used all that premium EVOO
Tell me about it. It did seem the "drizzling/finishing" oil was pushed fast like a race horse🏇 ... I'm sure it helped. Also curious the saffron was bloomed in water instead of warmed oil. Found out Jamie doesn't like saffron. Cool to know! Thanks for a wonderful segment .... both men were enjoying themselves.

Saw "paella" and Jamie... instantly knew this was going places lmao They both looked good tho, if a bit overcrowded. Paella is often called "arroz con cosas" (rice with stuff/things) so it's usually a bit more rice than whatever is accompanying it. A couple tips: add the stock before the rice, mix it well with your sofrito and then add the rice evenly; don't fill your paellera (or paella, really, since the dish's name came from the pan used for it) too much, keep it to around a finger (1-2 cm) deep so you get a nice socarrat; also, some people like to toast the saffron slightly on a spoon before steeping it or simply adding it to the stock.
I always love when Kush is on camera. He makes me laugh, and I always learn something. Jamie, I have to say to you that your plating on that paella was beautiful! I definitely would have loved to taste both dishes.

Great job guys, both dishes looked amazing. Funny thing is, it was quite predictible that Jamie's dish will have a burnt spot in the middle as the paellera was wobbling on the hob, and only the middle of it was actually in touch with the heating surface. This is a very frustrating thing about ceramic hobs.

Kush's experience as a chef makes his movements more precise but also challenges him to put it all together in something he doesn't always do. Lovely work, guys!

I think that one of the reasons why Jamie had no socarrat is the fact that he opted to toast the rice. When making risotto, the toasting creates a very light parboiling in the rice, and that's why (UNLESS YOU STIR THE WHOLE TIME, IT'S NOT BLOODY POLENTA) you don't get a bottom crust on your risotto, if you add enough liquid at first. In order to make paella rice is not toasted, so it releases the starch and this creates the crust on the bottom = socarrat.
This was brilliant, Jamie going back and forth on the cards, Kush giving nice tips for how to time adding ingredients. I'd love to see Chef vs a Normal using the Sidekick app series where you show off your favorite dishes on the app!
Love the chemistry between these two lads. I’d love to see a triple threat cook off, Kush and Jamie vs Mike and James vs Ebbers and Barry. Imagine the chaos.
As someone who’s followed your videos for a while and also someone from Valencian community who cooks rice in “our”way quite often, i loved kush dish other than three small details, he added extra stock, the peas at the end looks like the stereotypical “british” thing for us and the lemon to me must be there as an option but not compulsury. Overall a great video, please don’t be afraid to experiment spanish food because certain people here have thin skin
I would love to see you make traditional Spätzle/Knöpfle, a Swabian Dish. There are multiple ways of making them: Rub (Hmm.. translating is strange, look up Spätzlereibe), scrape them from a wooden bord or press them through a potato press. I also love the non-traditional versions such a spinach infused Spätzle!
I would love to see more baking in these challenges. It would be fun to see how a chef would bake without much instruction on measurements and such, and only go off of past experiences.
There are only a few ratios in baking and any chef that is worth his salt knows all of them... that wouldn't be the interesting thing you seem to feel it would be.
That was a great battle. I thought Jaime was in trouble with his Barry-like reaction to following the card order, but it turned out well. For the next battle, cook something with bay leaves!! I'm looking forward to the next Live show - the chef battle will be epic! I hope it will be incredibly complicated and bring out the best in everyone!
I'd like to see a two part Swedish julbord (smorgasbord for Christmas). The first part is prep/make all the cold dishes such as pickled herring, liverpaté and garvad lax (and maybe cook the rice porridge for the a la Malta) and the second is for the hot dishes like meatballs, Christmas ham, Janssons frestelse, brunkål and långkål. The second part ends with Kush and normal serving it all up to everyone then tasting each others dishes and the gang can vote for top three dishes.
For Jansson they must get the swedish anchovies, not the international ones. For some reason we call a version of pickled sprat anchovies here. So if they use anchovies it will taste horrible.
Oh man I just rewatched that angle of Kush chopping an onion 9:17 god I could learn so much just from those zoomed in knife skills. I tend to go down to one finger guide but watching how high he brings the spine up.
I offer myself as a Valencian to organise a gastronomical visit to the city for Jamie, including paella cooking, traditional esmorzaret and shots drinking. Just saying ❤😂
That's a good idea, maybe some sort reconciliation food tour, I mean Jamie and sorted already said their apology (i think),maybe Jamie could explain why he make what he make, and he can said what he learn, and why the valencian feels so upset of what he make, followed by proper valencian Cook to show the proper, traditional valencian paella, plus all the dishes valencia can offer, and maybe even feature the valencian who commented on original video, to show how important food to our own culture It could be great!

It's incredibly heartwarming that Jamie had to cook this paella, and arguably did a very nice job. I remember every time I've had to make paella at work. It starts with all the kitchen staff screaming obscenities, then getting to work on mise and arguing about traditional vs Americanized (shortcuts)

When making risotto, the toasting creates a very light parboiling in the rice, and that's why (UNLESS YOU STIR THE WHOLE TIME, IT'S NOT BLOODY POLENTA) you don't get a bottom crust on your risotto, if you add enough liquid at first. In order to make paella rice is not toasted, so it releases the starch and this creates the crust on the bottom = socarrat.

As someone who’s followed your videos for a while and also someone from Valencian community who cooks rice in “our”way quite often, i loved kush dish other than three small details, he added extra stock, the peas at the end looks like the stereotypical “british” thing for us and the lemon to me must be there as an option but not compulsury. Overall a great video, please don’t be afraid to experiment spanish food because certain people here have thin skin
I would love to see you make traditional Spätzle/Knöpfle, a Swabian Dish. There are multiple ways of making them: Rub (Hmm.. translating is strange, look up Spätzlereibe), scrape them from a wooden bord or press them through a potato press. I also love the non-traditional versions such a spinach infused Spätzle!

I would love to see more baking in these challenges. It would be fun to see how a chef would bake without much instruction on measurements and such, and only go off of past experiences.
There are only a few ratios in baking and any chef that is worth his salt knows all of them... that wouldn't be the interesting thing you seem to feel it would be.

I'd like to see a two part Swedish julbord (smorgasbord for Christmas). The first part is prep/make all the cold dishes such as pickled herring, liverpaté and garvad lax (and maybe cook the rice porridge for the a la Malta) and the second is for the hot dishes like meatballs, Christmas ham, Janssons frestelse, brunkål and långkål. The second part ends with Kush and normal serving it all up to everyone then tasting each others dishes and the gang can vote for top three dishes.
For Jansson they must get the swedish anchovies, not the international ones.
For some reason we call a version of pickled sprat anchovies here. So if they use anchovies it will taste horrible.

That's a good idea, maybe some sort reconciliation food tour, I mean Jamie and sorted already said their apology (i think),maybe Jamie could explain why he make what he make, and he can said what he learn, and why the valencian feels so upset of what he make, followed by proper valencian Cook to show the proper, traditional valencian paella, plus all the dishes valencia can offer, and maybe even feature the valencian who commented on original video, to show how important food to our own culture
