Happy Holidays Captain Ron! I love this recipe. I cannot eat peppers anymore (love 'em, but they don't love me). So I substituted with medium slices of beefsteak tomatoes, slightly grilled and lightly salted first. I made a 10lb USDA Prime rib roast on the BGE, used FOGO charcoal and a few presoaked oak chips. On your advice I added some very thin slices of fresh garlic to the layers. I seasoned the outside with avocado oil, kosher salt and fresh ground pepper. Cooked to 125°F and I let it rest for 30 minutes (always the longest 30 minutes of my life). Turned out absolutely phenomenal! Love the videos! Keep them coming in 2025!
