As someone who primarily eats beef, chicken, and pork. I have started grilling shrimp and it opened my eyes on wanting to cook more seafood. I would love to see more seafood dishes on this channel.
It needs to rest for a longer time before you cut into it. You can see (13:36) that the myoglobin (red juices) have not evenly redistributed. The outer section is slightly grey while the juice inside is flowing freely. If you let this rest for 35-45 minutes, it will be uniformly pink.

I do a few of these each year. Always buy around the big holidays when they’re on sale. Your bone marrow might cost as much as my roast. We use a drip pan with butter, garlic, rosemary, thyme and beef paste. Add small amount of vino to the drippings afterwards and pour over. And only use charcoal and wood chunks.
As to the smoked shrimp enchiladas: make what you want, not what Max wants. Max seems to want gimmicky food that looks good, I think people would prefer something that tastes good.

We were house sitting for my parents while my Dad was having cancer treatment and cooked a small roast just like this. It was so good, we felt guilty my Dad wasn't there. Prime rib has become a meal we have in his honour now.
I smoked a prime rib roast over some cherry wood, and served with bleu cheese mashed potatoes, and grilled corn.....lemme tell ya, that meal....is in every dream I have.
Grew up in San Francisco in the 1960s, and my father, who had been in the Air Force during WWII, had one of the original Kamado type cookers (think Big Green Egg) on our back patio. Smoked shrimp brought the neighbors out of the wood work...
My wife bought a Prime Rib 4 Bone, bones cut back and tied without watching this video… That morning I saw this… When I got home I shared it with her and then she goes to the fridge and tells me here it is, follow directions and I want the same Next day before she got up to work nights I prepared it for her. This rocked our world and we have kept this to ourselves because the flavor is off the chain. Plan to be one of our favorite ways to eat Prime Rib. Thanks man and keep teaching us new ways to cook. Thanks for the thyme brush idea! My herb garden is lousy with thyme, and I was wondering what I was going to do with it. Even if it's not prime rib, I will soon be basting something on the grill with herb butter and a thyme brush.

Hi, Sam! It looks delicious! Roast crown of pork is another wonderful meal typically only prepared for holidays or special events but I think done your way on the grill for any time eating would make a great video too!

Would be a waste to cook one of these over Gas. Charcoal is the way...
To avoid confusion most of us butchers reffed to this cut as a standing rib roast. You can then ask if the customer prefers prime or choice.
