Easy Roast Beef Recipe (Japanese-inspired Roast Beef with Savory Dashi Sauce) | Cooking with Dog

  • We are making easy and delicious Japanese-inspired Roast Beef. This is a perfect dish to entertain your guests during the busy year-end and New Year holidays.
    How to make Easy Roast Beef
    cookingwithdog...
    (3 people) Cook Time: 35 minutes
    Time for bringing meat to room temperature and letting it sit in a pot to cool is not included in cook time.
    300g Bottom Round Roast (10.6 oz)
    Salt and Coarsely Ground Pepper
    1/2 tsp Dashi Stock Powder dissolved in 200ml Water (6.8 fl oz)
    50ml Soy Sauce (1.69 fl oz)
    40ml Mirin (1.35 fl oz)
    4 Shiso Leaves
    Broccoli Sprouts
    1/4 Onion
    1 tablespoon (tbsp) = 15 ml, 1 teaspoon (tsp) = 5 ml

    For those complaining that the meat is too rare, this is what we call "medium" or "medium rare" in the industry. True rare meat, especially in steakhouses is dark red and actually cool (basically uncooked) in the center. Please stop exaggerating.

      callmechia if it is cool inside when ordered rare you cant sell it if the center did not received heat it's dangerous, but i still eat it even raw ^^ have a nice day

      Only in some states of the USA and some Middle Eastern countries. In most of the world, and that includes the majority of the USA, you can ask for it "blue" and it will come cold in the middle.

    I just made this tonight and it is REALLY delicious! I forgot to grab Dashi stock, so I used chicken stock instead and the sauce still came out delicious!
    Also, instead of pouring a lot of sauce over the meat, I poured a little on to keep it moist, and then poured some sauce in a bowl to dissolve wasabi in. The meat tastes DELICIOUS dipped in it! =)

      I might try it then. I managed to get my hands on some mirin, the dashi stock was the only ingredient I couldn't find so I'll try chicken stock.

    It's incredibly simple to 'roast' beef this way. It's actually a solution to the problem where oven is not available. Thanks you very much for a wonderful recipe.

    Dashi stock is a clear broth made by simmering kombu seaweed and bonito flakes :) Dried baby sardines and shiitake mushrooms are also used to make dashi.

    I'm doing this recipe right now with home made dashi stock. It's simmering in the pot with the stock, mirin, and soy. Plan to serve it with white rice and veggies. Wish me luck!

      Absolutely delicious. Had to increase my cooking time since my roasts were a bit bigger. Otherwise, it was absolutely delicious with white rice.

    happy new year francis and chef! wanted to thank you for the tip with checking the meat's temp with the skewer. i did this for a saddle of lamb i cooked new year's eve and when i cut into it after letting it rest, it was perfect.

    I really love the subtitles you added. It makes it easier for people, who need to look up a word or two, to understand the recipe. Is there any chance to add in brackets the length in cm? Since I find it really hard to imagine a quarter inch using centimetres all the time.

    Great tip for checking the temperature of the beef. Wasabi tastes so good with rare roast beef, we have used it many times!
    You might try for garnish water cress, the peppery taste is great with beef!

    Quick question though: what's the purpose of soaking the thinly sliced onions in the ice water? Is it just to cool the onion down before serving?

    Soaking the onion slices in ice water will reduce the pungent taste :)
