OMG I just made this and its deliiiiicious !!! I don’t have vegan mayo on the regular so I just added a tablespoon of plant milk instead, served it with an edamame salad. Thank you for this !!

Tofu is an already cooked product. It's never raw. What people think is raw tofu is always just cold and not cooked by themselves tofu. Like .. cheese. You can melt and grill cheese. But it's always already processed.
i don't think they would be great for meal prep as the rice paper & rice will get hardened in the fridge - although you could probably grill them again but i'm not sure...
I just happened to end up here but it will definitely be the last time. It's so damned annoying with your constant talking, use your hands more than your mouth instead.

I make my spring roll wraps on a plastic flexible cutting board and seems to have less stick issue.

I use my cheese grater for carrots, potatoes, tofu, onions, peppers and other items. I never use it for cheese...
If you do another trip in the future, like a few years from now, I would love to go. I can't right now. Life is just too expensive.
