CROWD-PLEASING GHANAIAN OKRO STEW RECIPE

  • I love okro stew...and love to make it...but I hate doing dishes. The recipe I grew up using requires cooking the stew first, meat separate, okro separate and adding them at various stages. This is a one pot recipe I've been using for some time now and the stew is just as delicious as the one that called for using every pot in your kitchen! Waa look!! Why don't you try it? As always, it is a delight to read your comments. Kindly share and tell your family and friends about Kwankyewaa's Kitchen Channel.

    Good afternoon,
I came across your TH-cam page about a year ago due to my Ghanaian honey and I have not tried one recipe yet... This will be my first. I love to cook for my guy but he loves American food and I hate that fact, I asked him what his favorite dish is from Ghana 🇬🇭❤... and he laughed and said "Banku and Okra stew, why do you ask, you can't make that, there is too much involved." Well he really doesn't know me, to please the one I love I will learn. You are the first person that I thought of and here I am. I will study this video and another one you have for about 2 weeks and then I will proceed to make for his lunch one weekend and I won't even tell him. But when I come back with my review I pray sista O that it is a goos one... til then thank you for sharing your recipes if this one works out I will try pthers and perfect my JOLOFF RICE thru you...
    Peace and blessings..

My Mom made a version of this here in the states. She was born in St. Croix, Virgin Islands. We called this Callaloo Soup. Her basic ingredients were blue crab, fish, corned beef, spinach, and Okra,, and we added some tabasco hot sauce. We ate this over Fungi which is corn meal cooked to a mashed potato consistency. This goes good with a nice glass of beer. I only learned to enjoy this exotic dish when I became a young adult, because when I was a kid, any evidence of okra frightened me stiff. I think the Southern U.S. version of this is Louisiana Gumbo which I also love. Your recipe is amazing with all of those ingredients.

Wow! This technique's quite simple. I was stuck with making the stew first and steaming all the meat/crabs/wele etc...long process. Aahh I'm so excited!! 😊😜😋😁😀😀😀. I'm making okro stew this week!!! 😂🤣(Although I don't eat it cos I can't stand slimy things, I love making it for the fam). Thanks so much dear. 😘

Decades ago, when I was in graduate school in Austin, Texas, the folks next door came from Ghana. I became good friends with the wife…our babies…boy for me, girl for her, were the same age. Our children, who were perhaps a year and a half, gave us a teachable moment. They each touched the other child’s hair at the same time…Aisha said “soft” and my son said “pretty cloud.” Both were entranced. Cecilia and I talked about how sad it is/was that the acceptance of children so often disappears before the pressure of society. I miss them and I miss the wonderful food and lovely dinners we shared. When they returned home, we lost touch.

Thanks for the recipe. I cook okra every week but doesn't look this good nor gluey. I like the idea of blending some of the okro and also adding chopped red onions. 90% of good food is how it looks. If it tastes great but doesn't look good, you rarely would touch the bowl. However, I believe even if it doesn't taste good but looks great, at least you'll get to the bowl. Kudos!

My hair dresser told me to try this, like jollof rice i make it my own personal way that is nice, can i do it with this and what meat or fish is good, as im half Italian Sicilian i love food but dont like food with shel or or tiny bones in, what will go good with this dish if i make it at home?
Will chicken thigh fillets, king prawns, de boned white fish or cod, tuna steaks and chunks of beef or lamb go well, pork? Do I Mixed All togeather fish with farm animal meat or just say 2 meats at a time to start with learning like chicken and prawns?
Id love to taste it the Ghanaian way when i visit one day also, as im on Spectrum i counlt deal with touching taking appart shells all time at home, im exactly the same with Spanish paella i love it but have to do my own way so not eating with my hands all time so can use spoon and fork.
Looks very nice by the way but i coulnt cook it like you for myself or family id have to have it made for me by someone else so that reason also id like your help, love trying new foods, and where can i buy in United kingdom in Essex?

Thank you so much for your recipes, been trying them and they come out amazing. I wanted to ask if I could use frozen okro because that’s all I have at the moment and how can I get it slimy?

I am happy to know the videos are helpful. Yes please, you can use frozen okro. And blend a third of it and add together with the cut okro to get it slimy

Yes frozen okra is what I use always but it slimy keeps coming and I sometimes keep my okra stew or soup for 4days what you have to do is ,if you are the type that always cooked the okro aside before adding it to the stew always boil the water first before putting in the okro or just add your Okro straight in your stew or soup like the way she did and it's slimy will always remain.

I like the combination of various meat, the pig feet, ox tail cat fish and fresh crab. we in sierra Leone add more red palm oil. and mostly eat the okra stew with cassava fufu. But my Ghanaian work colleagues had introduced banku and kainkay to me and I am the only one in my house who eat okra stew with that. My sons will be like "Dad what is that what is that smell'. I love banku and lainkay
