      Right. Chris was spot on that you if have the ingredients such as lobster shell, you use them to make the stock.

      @@abbyl1608 same difference. Broth usually means simply seasoned and/or fortified stock. so just put some salt and pepper in good stock and you got a soup broth.

    Chris defending his method and skill is the only reason I keep watching. His experience and knowledge outperforms the chefs he is challenged to recreate. I call this a win!

    I thought his first ingredient score was unfairly low due to dinging him for every ingredient in the scratch lobster stock. I also really appreciated Chris defending his pastry crust as better than the original, and snapping that he's not about to adding baking soda to pie crust when he doesn't need to :-)

      I mean, his ingredients were pretty off this time compared to usual. I do think they should have been comparing the ingredients of the two stocks, though, regardless of whether homemade or not. Unfortunately, though, lobster is not fish, lol, so it might not have made much difference.

      Nah I don't think so getting the appearance right was more so the puffiness of the pastry than the 5 cuts, the reason its so low is because the appearance is pretty easy to tell what it's supposed to be, for some other dishes the appearance is a lot more complex so slight variations won't lead to a huge cut in score but when it's extremely simplistic like a pie in the very same pot the margins are much smaller.

    Chris, that comment about being humbled by pie dough every now and then has fully liberated me. I am pretty inconsistent when it comes to quality pie crust, and I just feel like I've been transported to better company than I'd assumed.

      They once took points off of him bc he used a different kind of pan to make one part of the dish! Like is he supposed to taste the pan on the dish? Wtf. Honestly sometimes it is infuriating to watch his genius man being judge so harshly

    I love how much life he puts into this. He’s cheering for his scores like somebody cheering for their team. It’s so sweet to see how disappointed he got in himself and the weird energy between them too in the end 😅 sweet Chris. You rock and we love you even when you have a low score ❤️

      I think Chris aired the office drama first by giggling, pointing to the back of the room, and saying that's were you normally live basically eating sandwiches. "No need to prove anything here" is also pretty condescending. It's pretty unlikely that this is the first testy conversation that these two have had engaged in together.

    Imagine what people would say about Chris if he'd actually CHOSEN to throw away the rest of the lobster to simply use a store-bought fish stock instead! I'm curious to see if I can find out what Ina's excuse was for choosing it. The scoring on this seemed way off to me, especially the "Appearance" score.

      Yeah but I think maybe it would have made sense to include at least some fish stock bc it wasn't fishy enough. Could have sautéed the shells and then boiled them in the fish stock instead of water!

    I thinks credit should be given for the lobster broth. So good. FIRST instinct is the right one. I would give you a pass because I agree with you about the lard on the crust and the lobster stock look amazing. And your crust looks amazing. WRITE A BOOK

    Buying a lobster, having a stock, and not using the shell in the stock, is so wasteful. Chris's 1st version was better than the actual recipe.

    At the end Chris made a far better version (especially version one), than Ina. The only thing, which he really missed was the Pernod (or any Pastis) - this is usually crucial - and he should have thought about it.
    But to be honest, it is very convincing, that he is a really good cook.

    I have to wonder if Chris's approach would differ if he knew the chef whose recipe he is trying to recreate? I imagine it could be a major hint as to how to approach the recipe/what ingredients to use/etc.

      Normally Ina Garden has good recipes. A bit homey - but far beyond the “white trash” recipe of e.g. Rachel Ray or Paula Deen.
      I guess, even if Chris would know the origin, he would have made the Lobster stock (...).

Or, oh this is a Rachael Ray recipe so I'm going to add XYZ and build the recipe in this specific way? I wonder if it would be a help or a hindrance to his final scores?

      But that would ruin half of the surprise of having to determine what he’s attempting to make. I mean, anyone can recreate someone else’s dish, and not blindfolded at that, but he has to determine what’s in the dish by taste, feel, and smell alone. If he knew who made the dish ahead of time, he would know what to include or exclude.

    A pot pie recipe is already such a demanding experience, I'm surprised they had him make the recipe a third time! I'm sure he was tired by that point in the day, and then judged far too harshly for having such smart instincts in my opinion. The appearance score was downright brutal.

    two sides: Chris version number 1 made alot of sense. more then the OG one. the 2 things i would say he missed is the corn and fennel thing and him not putting alcohol in it.

    I would like to see a tasting episode, where he tries different types of onions, and had to try to guess white yellow or red! Of him guessing other various similar ingredients, basil vs parsley or something similar different types of broth… chicken vs beef vs fish vs turkey vs vegetable.

    77 for appearance?! It was a pot pie and looked like a pot pie. Taking away 23 points because it had two less slits and was a slightly different height is insane
    Consensus, 90 for appearance, adjust overall score accordingly 😂

    If I had a choice between Ina's and Chris's, I'd choose Chris's first version. I appreciated that he used the lobster shell to make his stock. The fact that he could not tell there was fish stock in Ina's version indicates it didn't have much flavor. Good for Chris that he can make a crust without a recipe! I've been making pies for many years and still use a recipe every time.

    I love this series, but I honestly would be curious how well Chris would do if he can see the dish. I imagine the grading would be harsher, but some of these have very elaborate preparations.

    Although the dish was definitely more on the challenging side as far as these go, it seems the judging was a bit severe, especially in appearance. He ended somewhere around a B- in my mind.

    They chose a recipe with too many steps, ingredients, and can be taken in many directions.

    I think the appearance score was really severe. I’d say 90% at least. I couldn’t tell the difference between them.

    Once I saw this recipe, I knew he’d miss the lard. Also figured he’d miss the Pernod.
    Lobster stock vs fish stock. I get using the shells to make a stock. She does that for other recipes, but not this one. Often times she buys already cooked lobster meat. So she might not have had the shells.

    I am a little surprised that the anise flavor of the Pernod and fennel bulb didn't come through, but I think he got kind of hyperfocused on the crust and making the stock. They both sounded delicious, though! And I think the scoring was fair.

      @@rring44 definitely, I would still love to see him go crazy and have no regulation on this dish for some reason lol maybe because it’s lobster and I feel like if he had full reign to do whatever it would come out even better and crazier than the first pie he made, which definitely seemed better than the recipe he was recreating

    that ingredient score initially was so unfair - it threw him off enough to remove the lobster stock. kudos to chris

    Why does scoring seem to get more unfair each episode? Love this series but it kinda annoying to see him get so low balled after more than successfully creating the dish.

    Y'all doin Chris dirty here. All them points on Appearance for some slits? And honestly it makes sense why Chris made his own stock. Even if it wasn't correct I like that he thought of it!

    Ahhg! He did recognize that it wasn't fishy enough (even said the original smelled like fish pie). Maybe making a lobster stock but with fish stock would have been a good compromise to get that original, stronger flavor without being wasteful? Eg, sautéing the lobster shells, then boiling in the fish stock!

    man the first version with the lobster stock and minus the corn would have been the perfect dish. Even though it wouldn't be a recreation of the original. I'm gonna try to make Chris' version myself!

    I 100% agree if you're cooking/cleaning the lobster yourself, use the shells to make a stock lol wtf?
    They are both correct though, the show is called "Reverse Engineering" so he's not supposed to improve on the recipe thus he essentially failed even though his is better than the original.
