      Food Wishes chef, which Bourbon did you use for this recipe? not all Bourbon will fit maple well. I would recommend something with BIG vanilla notes (like Makers Mark) and heap up the chili flakes.

    This is why I will click on your videos before any other cooking tutorials - even those by the culinary geniuses across the pond. It's one thing to show how to do things perfectly, but the mark of a great teacher is to validate creativity while freely discussing why things can go wrong. Personally, I think it was the coffee - maple syrup and whiskey/Scotch/Bourbon/Rye can go beautifully together.

    My family really loves flat Iron steak. It's the closest we've come to to having steak like what we had back home in Argentina.
    All we do is burn some hickory or mesquite wood chunks until they are mostly white and crumbled (little chunks, you don't want powder, that doesn't retain heat). We salt the meat with rock salt liberally on both sides (do this at least 15 minutes before putting them on the grill. Place the ashes about 6-8 inches under the grill (not too much) and cook the meat for at least 1.5 hrs, ideally 2-3 if the temperature is right. Should only have to flip once, or twice at most.
    The way to measure the heat is, if you can leave your hand over the grill for 2-3 seconds. It's fine. Less than 1 second is too hot (remove ashed wood), and more than 3 seconds it's not hot enough (add ashed wood). Check the heat periodically.
    Fire should never touch the meat. You want it cooked, not burned.
    Honestly, you should give it a shot. Ever since I came to America all I ever see is marinades, sauces, and heavy rubs. Although those are also delicious, to us, it'll never top slow open air smoking with rock salt to taste.
    P.S. This meat usually comes out best around medium-well, but that's up to you. Test it out. Only time it ever came out slightly dry was when we added too much ashes and forgot to check the temperature. 2 hours later it was slightly dry, taste was still delicious though.

    I think the problem was the coffee - maple syrup and bourbon go together nicely. (And I used to know of a restaurant that marinated their steaks in equal parts Jack Daniels and dark soy sauce, with a fair amount of pepper, both black and red - it was delicious.) If you want to serve steak for breakfast, serve the coffee on the side :-)

      I would've actually thought the problem was the maple syrup since coffee & bourbon both go well on steak. Just trying to picture it in my head, it really seems like that maple-y flavour would be the odd one out in this combination.

      I just can't imagine how coffee would taste good on steak. Although I have to admit that I loathe coffee in any form. I drink very strong iced tea, but it would never occur to me to put tea on my steak either.

      Coffee rubbed steak is already a highly endorsed thing, so brining one in coffee isn't hard to imagine. I'd say to add some chili powder to the brine, & maybe swap the maple syrup for brown sugar or something.

    Great to see these cheaper cuts of steak being used. I tried Denver steak (also from the the shoulder) for the first time last week and it was amazingly juicy and tender. Here in the UK it's about half the price of ribeye! Will be giving Flat Iron a try next. Thanks chef.

    Helloooo Chef John. You are only one of a few who know about the Flat Iron. That was my go to steak when a fillet was not available, and at half the price or less, because it comes from one side of the 7-Bone in the chuck, the piece on the other side of that bone was called when I was a meat cutter, the Jewish Fillet. I see that you cook your steak in a large lump. I used to cut our flat iron into 1/2" steaks cut across the flat iron. That tail piece was for those who like their meat a little more well done because the Flat Iron thins out at the tail end. A word though John. That flat iron you showed has been trimmed down to where it is almost the same thickness from one end to the other. They are not that flat and you don't have to skin if down that far, just take off some of the "silver" lining.
    For those who don't know much about that cut of meat, it has all the beefy flavor as does the chuck, not only is it tender but as John says it is also very flavorful. I almost forgot. That sinew you cut out actually turns to jelly when the steaks are cooked and adds to the texture and flavor of the steak.

    Hey chef john you think you can do a video on how to make Tortas? It's a Mexican sandwich you can make with either chorizo or grilled meat (Carne Asada). The grilled meat sandwich often has beans in it and queso fresco with chopped lettuce, tomatoes, onions and some people like avocados and jalapeños in them. The chorizo sandwich is much more simple it's just chorizo and scrambled eggs makes a great breakfast sandwich i like mine with beans as well in it but I think that's just me. Also the bread you need to use is called bolillo which isn't hard to find. But yeah just an idea

    I just found this channel/chef. I'm enjoying Chef's sense of humor. As soon as u poured the coffee into your marinade I suspected that it wouldn't work because of the amount of coffee used and the acid is in coffee (especially if Starbucks coffee was used); but more importantly which coffee you used.
