  • OATMEAL CHOCOLATE CHIP GOJI BERRY COOKIES
    Goji berries elevate these oatmeal chocolate chip cookies, both aesthetically and nutritionally. These little berries add protein, fibre, antioxidants, beta-carotene and vitamin C to these yummy cookies! I hope that inspires you to make these healthy and delicious treats!
    Ingredients:
    1/2 cup softened butter
    2/3 cup brown sugar
    1 egg
    1/2 tsp pure vanilla extract
    3/4 cup flour
    1/2 teaspoon baking soda
    1 teaspoon ground cinnamon
    1/4 teaspoon salt
    1 1/2 cups rolled oats
    1/2 chocolate chips
    1/2 dried goji berries
    Instructions:
    *Preheat your oven to 350 degrees Fahrenheit.
    *Line 2 cookies sheets with parchment paper.
    1. Soak the dried goji berries in a bowl of room temperature water for about 10 minutes and then drain them well.
    2. In a separate bowl, mix flour, baking soda, cinnamon, salt and oats.
    3. Cream the butter, brown sugar, egg and vanilla in a large bowl.
    4.Then stir the dry ingredients into the butter and sugar mixture.
    5. Stir in the chocolate chips and the goji berries.
    6. Using a small 1.5 inch ice cream scoop or spoon, form 1 inch cookie dough balls and place them at least 2 inches apart. Press them flat with your hands.
    6. Bake in a preheated oven to 350 degrees Fahrenheit , 1 tray at a time, for 10-12 minutes.

      You're welcome! They are actually more chewy, but if you bake them longer they will be more crispy.

    I have never thought of goji berries in cookies! The only time we’ve had them is in Chinese remedies. What a unique concept!

    I have fresh gojis. Can I skip the soaking step?

      Hi Wendy! Wow you have fresh gojis? That's awesome! I've only seen the dried ones. I would say if you are baking with fresh goji berries, you can skip the soaking step because the soaking step is for rehydrating the dried berries. I'm not sure if the cookies will taste different or have a different texture when you are using fresh goji berries, but please give it a try! I would love to hear how they turned out!

      @@francineshuen I made them tonight. Changed a bit ¾ c choc chips and ½ c walnuts. No problem with fresh, just used them as is. I’d say consistency the same, very good! I have a goji plant in my garden, only had about a cup. Maybe more next year!
