How I brew with Double Stainless Dripper🗑️🇯🇵 ✧ KASUYA Model✨ | Pourover Coffee | My Way

  • 📌 Hello everyone, today I am showing you how I brew using the double stainless dripper Kasuya model from HARIO. This dripper was relatively newly released, where the main purpose of its design is to replace the cloth dripper, which required a lot of high maintenance and cleaning. The idea is to mimic the rich taste of cloth dripper, allowing coffee oil to get through into the cup, while removing the high maintenance/cleaning problem. It also encapsulates the traditional Japanese method/way of brewing coffee using cloth filter - both hands, one to pour, one to control the dripper - when extracting by hand, it is an experience similar to the cloth dripper.
    This dripper was a great challenge to get a good cup of coffee. The main issue of this dripper is that it clogs throughout the brewing process. After trials and errors we found that the best way to brew it is by constantly pouring into the centre of the dripper until the desired water level and let it all drain. When using it, it's important to NOT swirl or flush finish because that would lead to clogging. The pour level/speed should be a bit to the slower side, but you can change and experiment with it. As it is also a metal filter dripper, the smaller coffee grounds can get through and go into the cup, resulting in a cloudy brew so we would also recommend using a medium-dark to dark roast coffee rather than light roast.

    ⏱️ STEP-BY-STEP GUIDE
    -----------------------------------------------------------------------
    1. Prepare 20g of coffee (preferably medium-dark to dark)
    2. Boil water to 88°C
    3. Pre-wash and pre-heat the dripper and server
    4. Place the coffee ground and inside
    5. Bloom - approx 20-30ml, pour slowly, bits by bits, try to cover as much coffee surface as possible
    6. Wait until the timer reaches 30 seconds
    7. Start pouring bits by bits and slowly go for - at around 1:00 min - a constant middle/centre pour until 280ml (try to remain at the middle as much as possible to prevent it from clogging)
    8. Let it all drip - our time was around 3:30 when done
