    CHOCOLATE:
    I mostly use candy melts in products like this, they are more predictable to work with than white chocolate and easier to colour etc as there’s no yellow tones to deal with. If you do use white chocolate, you will need to temper it. If using candy melts, I use a double-boiler. This is where you place a metal or glass bowl over a saucepan of hot water and slowly simmer the water to melt the chocolate. Always ensure you don’t allow the bowl to make contact with the water as this will burn the chocolate.
    FILLING:
    I personally use any sponge cake to mix with the buttercream to make a cake pop dough. I always use scratch made cake but if you prefer you can use a box mix. My cake recipe is quite moist and so doesn’t need a whole lot of buttercream or ganache adding to it to make a dough. You can also experiment with fillings such a mousse, brownies or truffle.
    TOOLS:
    Besides the obvious moulds, there aren’t a lot of complicated tools needed. I use an acrylic ball tool to spread the chocolate around the mould, you can also use a brush or spatula. You’ll need an angled spatula or bench scraper and some metal or glass bowls for melting the candy melts.
    COLOURING:
    If you need to colour your chocolate, I mostly use candy colouring by either colour mill or sugar flair. It needs to be a colouring specifically for chocolate (also known as fat dispersible) as normal gel colours do not blend into chocolate and will cause it to seize.

      Hi, what you charge depends on a lot of factors including your skill level, the quality of your ingredients, your local market, and most importantly, the design of the items. A simple Cakesicle would be charged at a much lower price than one that you have spent a lot of time working on it had to mix a lot of different colours for etc. I would advise working out how much they cost you to make and how much time you need to put into them and also do some research on prices in your local area.

    Hi Kayla! I know this is 2 years ahead but I hope I can get through to you. You give clear straightforward advice which is always helpful for upcoming bakers like myself. Would you recommend and suggest it would be okay to use a frozen cake. i.e baked a fresh one and popped it in the freezer, and when I want to make the cake sicles to then defrost it and whizz it up?       Hi, yes you absolutely can. I do that quote often as I save off cuts and leftover cake. You can also make the Cakesicle ‘dough’ ahead of time and freeze that too

      As long as you freeze in good time there is absolutely no problems with doing that. Maybe perform some trials ahead of time to ensure good quality. And make sure to wrap your cakes well when you’re freezing them. I usually wrap in greaseproof paper, then cling film and then into a zip lock bag.

      Hi, what you charge completely depends on your ingredient costs where you are, your skill level and your other outlays that you need to consider such as insurance and tax etc. I’d advise calculating those costs to work out what you need to charge. I never sell them individually though

      Hiya, it depends how warm the country that you live in is. I am in the U.K. and I store mine at room temp in a cardboard box usually. Mine last about a week but I would advise conducting your own trials to see how long your recipe lasts.

    Oh my gosh this tutorial is absolutely amazing thank you so much I had a question I noticed you do not take out the excess chocolate from the molds again thank you so so much and also I am from New York and was wondering how the heck to ship these things the breakable hearts so they don’t break any suggestions on how to package them securely so they get to the receiver unbroken

      To ship them I wouldn’t box them like i have here. I ship these across the U.K. and I usually wrap each item first in a cellophane packet, then I line a thick box with bubble wrap, then a layer of shredded paper, then place the items in, then bother layer of shredded paper and another layer of bubble wrap. I don’t ship them during the hot months though. I don’t personally empty out the excess chocolate as I like a thick shell, it’s personal preference. Thank you for your kind words

      @@cindyalexis616 I haven’t shipped those, I think you’d need a lot of packaging to ship to them. I just kept experimenting with my packaging by sending things to a friend till I found a way that works. There are a couple of packaging time lapse videos on my IG (Cuppa _Kaykes) and TIkTok (The_Cake_Lady)

    Hello! Loving all your vid & thank you for the clear instructions. I've never worked w candy melts b4 and have a few que regarding this.
    1. How much do u melt for like 4 geo hearts at one time? Do u need to warm the candy melts also at the last drizzling part b4 u put on the sprinkles?
    2. I live in a humid country with temperatures fr 25 to 35°
    Have u any advice should I attempt to do this? eg. in an air-conditioned room, should I leave the candy to cool longer than your recommended time?

      Hi, I would advise running trials for your climate. Yes you may need to wait a little longer and yes, I always re melt the chocolate before the drizzle stage.
