CHOCOLATE:
I always use candy melts in products like this, they are more predictable to work with than white chocolate and easier to colour etc as there’s no yellow tones to deal with. If you do use white chocolate, I would advise tempering it. If using candy melts, I melt mine for one minute initially and then in 30 second bursts, resting for for 30 seconds inbetween each.
CAKE:
I use any sponge cake. I always use scratch made cake but if you prefer you can use a box mix. My cake recipe is quite moist and so doesn’t need a whole lot of buttercream adding to it to make a dough. Do not be tempted to use ganache or anything too oily to make the dough as the oils will start to leak out once they’re set.
TOOLS:
Besides the obvious moulds, there aren’t a lot of complicated tools needed. I used an acrylic ball tool for the standard cakesicle mould and a brush for the twister style one. You’ll need an angled spatula and some plastic bowls for melting the candy melts.
COLOURING:
I used rainbow dust powder colours because that’s what I have, there are a few brands out there that will colour chocolate, but be sure to check as not all brands of gel do. If using powder, add a little Trex to your chocolate to stop it seizing.

They are so so pretty. I like this way you’ve done them but I prefer the other way putting the cake in first then dip them later. I’ve got my geo mould yesterday will try it out this week.

Why do you put the sticks in before you put the cake and finish adding the melted chocolate? Isn't it easier, I find, to insert the sticks before the final melted chocolate on top?

Hi, full info on chocolate I use is in the description. I almost always use candy melts for items like this as it means you don’t have to temper them. I never add oil, if I need to thin it I use Trex (crisco if you’re American)
When i google "trex" it just shows me t rex :P ... is trex the same as shortening?
