For end grain a quick rinse / scrub with warm soap and water is fine. The key is to immediately towel dry afterwards. Occasionally sand and treat with mineral oil after it’s been dry for a few days.

Original amatriciana is done without onions and guanciale is always better than pancetta. Only use pancetta when I can't get guanciale
