    Hi Adelina Iooks good. I am Italian we add green peas, green beans, Swiss chard and cabbage to minestrone. You can also use rice instead of pasta. You are correct it is a heartie meal and feed alot.

    Made this tonight. Yum😋 I used my 3qt Instant Pot & it fit 1/2 of Recipe perfectly. I even found some “mini” Bowtie Pasta. I used whole can of beans & cut the Italian Seasoning to 1/2 Tablespoon, but put in 1/4 tsp of red pepper flakes. Did give it a nice kick. 👍Thank you for sharing your recipe.

    Soup's on!! A great way to combat those
    inflated prices! They say food prices are
    only up by 11-25% over last year! Everything
    has been raised or packaged smaller so
    that you are paying more for less! "Shrink-
    flatiron!". Don't get me started! It is great
    that you are informing people that there is
    a way to stretch the budget with

    I made this today. Even my grands liked it. Cooked on the stove 3 hours and the broth was so thick and rich, very yummy!

    Soup looks yummy 😋. I use filtered water. A good chunk of crunchy bread to dip in broth.

    That looks very tasty - many thanks for the recipe 👍. I've never been much of a pasta eater, so I tend to add rice into some of my soups. Plus, I don't add any salt at all when cooking, so I use plenty of spices to compensate. We're currently having fresh fruit and veg shortages here in the UK, so it's a good job that tinned or frozen are available as alternatives. Yes, food prices have got silly and continue to increase.

      @myBIGtinyhouselife They are saying poor crops due to the weather in countries such as Spain, Morocco, etc. Also, the supermarkets themselves are playing a part in the shortage..........they are only willing to pay an absolute pittance to growers/farmers and with the current energy prices, this means that with the cost to heat their greenhouses to grow tomatoes etc., and the price that they receive from the supermarkets, it's not worth growing them. UK farmers are looking at growing products which they can sell for a good price and make a profit. Small independent greengrocers (which are like gold dust these days) have plenty of fruit & veg. It's all the supermarkets that have shortages. More and more UK farmers are giving up farming, and it's time that the supermarkets started paying farmers and all other producers, a decent price for any products that they produce.

    Thank you so much Adelina! Was wondering what to fix for supper. I was going to make homemade potato soup. But then I got the information from you on making a minestrone soup. I thought now that sounds pretty doggone good. I was able to manage to raid my pantry find all the necessary but I did add California medley from the freezer and added that to the soup. I even braved putting in a little bit of pepper just a pinch. I even had the pasta they use in minestrone soup in the pantry! Topped it off with homemade. Thanks again take care and stay safe 💖

    That looks very good! Can you use a Crockpot? Cook how long … Crockpot? Thanks for recipe! I definitely make that and freeze some!

      Hi. I'm not sure about a crockpot. You'd have to be careful not to over cook the veggies.

    This is great! I’ve been making a different vegan soup every week this winter. Like you mentioned, it’s a great way to use up those stray items in your fridge!

    looks very good! :) bowtie pasta is one of my favourites! have you ever tried to make a vegan ramen or pho at home with tofu/veggies? that would be fun to watch you make!

    I love soup and the steam coming off yours has me thinking about a big pot for dinner tonight. Some sort of muffin or biscuit to go with it and we'll be set. Got more snow overnight and cold and snowy means soup type comfort food to me. Grocery prices are nuts!

    Ohhh I want some! I have been diagnosed with lpr, reflux in throat with abnormal cells at base of esophagus, so bland bland and sigh no onions which I love, no tomatoes, no chocolate… but I will learn and hopefully heal well enough to have them once or twice a year. So, I will enjoy my homemade chicken soup tad bland but not terrible like first batch. Lol.

      @@myBIGtinyhouselife thanks it will take a long while as been trying to eat and do the suggestions for almost a yr (april) finally saw surgeon for scope to see what was actually happening as far as understanding its not barretts esophagus yet so my goal is to hope-it doesn’t get there as that’s precancerous tissue. I have another call with him-end month and have more questions.

    You are correct that groceries have dramatically increased in price everywhere! I know you're Vegan, but if you want a heart check look at the price of eggs. Soup looks yummy, thanks for sharing. Hugs and rubs to Sophie.

    Quick question, Adelina...what size is your IP? I think mine might be smaller than yours. When I made your pasta recipe a while ago, it was SUPER full! Wondering if I should adjust amounts. 🙂 Thanks. Going to make this tonight...I think I may replace the zucchini with a delicata squash I need to use...

    I don't know if you can or do. But use coupons . Or know which store are cheaper and shop the sales. Or farmer market.

      Clipping coupons isn't really a thing in Canada like it is in the US.
