Mirin is similar to sake, but it's seasoned and it has a lower alcohol content so rice wine can't be a substitute but in this recipe, you can substitute with other cooking wine 👍
I have just purchased your book. I cannot wait to try a couple of recipes. Where I live in Scotland (I am in Fife) we have to travel to Edinburgh for Korean food. With your channel and book for guidance I'm sure I will be able to do it. (I'm not a very skilled cook)

Made this for dinner after realizing I didn’t have as much gochujang as I needed for my plan. All I can say is WOW. I love Szechuan flavors and I have never achieved something this authentic at home before! I’m tingling with mala and over the moon!

I've been making mine spicy lately. I just follow Aaron's regular Jajangmyeon recipe, but I fry in chili oil and add gochugaru and spicy chili crisp.

Can you substitute Chinese chili bean paste (doubanjiang) with gochujang? Would the taste change a lot ?
If you want gochujang,I would recommend you looking for his gochujang noodles which I know he has.
