This is the cleanest noodle making machine I have ever seen in any of these videos. Usually it's just a very old machine that is caked in flour. Not saying that is bad, but the difference here is very noticeable.
One of My favorite foods is Udon. Udon is a white noodle made from wheat flour. It is thick and soft. We can make noise when eating these noodles. Slurping when we eat hot Udon helps prevent us from burning our tongue

It looks like the udon noodle broth is just water? The same liquid used to reheat/boil the udon is used as the broth? Can someone verify? Also, what is the ceramic dark-colored carafe, is it a mixture of the kombu dashi and dark soy sauce? Thanks!
According to the explanation by the restaurant 20:11, they recommend using a cup of dashi soup prepared in 5:56 to eat udon within the hot water to customers.

私は空堀の本店の方のご近所さんで、もう10年以上通っています。私は釜中(釜揚げの中)一択! 席に就くと先ず生姜とおろし金が出てきます。おうどんを待っている間におろします。ほどなくしてお出しの入った大きめの徳利、そしておうどんが運ばれてきます。徳利持つ時におしぼりで片方の手を添えるとうまく出汁が注げます。(女性では少し重いので) そして天かす、おねぎ、おろした生姜ををたっぷりいれて頂きます。
おうどんはもちろんですが、なんと言ってもつけ汁がおいしい。あしたまた行ってこよ!
