As a Euro-Asian-American (Indo in America) I just LOVE these videos because my late Mom used to make this from scratch after seeing it somewhere in Indonesia when she was a kid. Her main hobby was cooking.

It was not difficult if you can buy kombu, anchovies and bonito. And sake is easily replaced with dry white wine. So now you can combine the ingredients at home)
He didn't used gloves at all normally people complain about why don't He gloves But why no one arise question when it comes to Japan But he arranged food items very elegant way and clean
Typically the Japanese culture has a much higher standard for cleanliness. If someone was to get sick from the food, it would be shameful to the restaurant and chefs
