Tess Makes Her Mom's Famous Gefilte Fish Recipe | Slightly Kosher

  • We're not going to lie to you and tell you Tess loves seafood-and Tess isn't about to pretend that gefilte is her favorite Passover tradition; BUT! That won't stop her from making her mother's very famous gefilte recipe. Watch Tess as she shares the history behind the dish and her family's very own... uhm... tradition... of catching live carp and placing them in a bathtub. (We wish we were making this up.)
    If you're not familiar with this traditional Jewish recipe; think of this combination of carp, whitefish, mullet, and pike as a fish meatloaf. Let us know in the comments if you're planning on making this for your Seder!

      Made this on Sun. (modified recipe but same general idea) and it is SOO much better than the jarred ones! Thank you for posting gefilte fish! I was the only one eating it so I just stopped including it the last couple years. Reminds me when I realized how easy it is to make lox lol --- used 6 cod fillets (all I could find), carrots, onions, matzo meal, and eggs. Placed it in a casserole dish in their own little loaf pans (made 3 mini loafs). Added water to the casserole dish and then covered the whole thing to let it steam/ cook in the oven. I'm never going back to jarred! It's makes eating better than a king much more yummy!! Lol Pesach Sameach!

    I laughed the hardest I have in a long time when she said it smelled like driving through Seacucus with the windows down. That is a VERY distinct smell that only those who live in Northern New Jersey will know EXACTLY what she means! Incredible, Tess. ::chef's kiss:: on that description.

      they didn't. they probably bought a live fish and since they are big, you leave them in the bathtub until you kill it.you have to hit it in the head to knock it down before killing it. people around the world farm and kill their own food..

    i was raised ultra-orthodox, and as far as i know there's no specific association of gefilte fish and pesach. we just eat it on shabbos and yom tov, and pesach is one and sometimes both. one thing my mother does make on passover is falsche fish though, which i think is like... a chicken meatball? not sure why this exists. i actually really like homemade gefilte fish but falsche fish is a hard pass thanks

      I always just assumed it became popular on Pesach because it's easy to pre-plate and have ready to eat once the pre-dinner parts of the seder is done

    tess, have you had moroccan style fish? it's a sephardic jewish recipe. we typically eat it for shabbat at my home. it cooks in a spicy paprika sauce with lots of garlic, tomato paste, cilantro. there are many versions of course but that's the main idea. it really doesn't taste fishy at all and the sauce is perfect for dipping challah in. sooo good!

    My friend's mom used to make the best gefilte fish. She used two fish, skin one and fill it with the meat of both. Tess, I know for a fact she never tasted it raw though.

    I made some great gefilte fish this year. I don’t make it every year, but it isn’t hard and my family likes it. I use whitefish and salmon and poach it in quenelles.

    Michael's obvious enjoyment of Tess's revulsion and suffering says it all. On another note, I never knew what gefilte fish was. In a million years, I never would have guessed it was fish loaf.

    From what I know... Gefilte fish is associated with the Passover because it was something created out of necessity and poverty and finding ways to still eat kosher during hard times.
    I may be wrong but that's my idea of it. Also I hate it, I'm with you Tess

    Hey Tess, has your mom created a really good sweet Kugel recipe. My mom learned from her mom and my grandmother from her mom in Poland. Problem is the recipe vanished after my mom died.     I always enjoy these videos, but this is probably the first recipe I’ve actually been excited about making. It’s looks like the ideal version of gefilte that I didn’t even know existed.
    My first gefilte epiphany came when I tasted my cousin’s former fresh off boat Russian mother-in-law’s version, which was the first time I had it as part of a well emulsified loaf, rather than a coarse meatball.
    The next “aha moment” was when I was in London, where I had fried gefilte, with a browned and caramelized exterior.
    This version looks like it combines the best of both of those!
    My only suggestion would have been to have taken all of the bones and heads and tails and made stock, let it cool in the fridge overnight, then to have served that delicious fish jelly with the loaf!
    Also, I think you were being a bit rough on Secaucus. It’s not like it’s reeks like Elizabeth!

    I suspect the fish "package" smell so badly, is that it was decomposing already. (normally prepped fish would be stored in ice/chilled condition)

      It's standard to provide all the fish she purchased. All the fish monger did was de-bone and grind the fish and package it and then in a separate package provide the heads and tails. Some people use the heads and tail. Think of it like the gizzard in a whole turkey.

      @@jeanche2420 I know you probably didn’t mean it, but it’s rude to speculate about things like that (I am assuming you mean pregnancy) because you never know someone’s situation or even if they want kids at all. Besides, I personally know that I would feel sick too if I smelled a strong fish smell!
