I highly recommend ghee as a substitute for the oil. It makes any kind of fritter (I make Sohla's zucchini-lentil ones on the reg) so much better. Also use tongs instead of a spatula to avoid splashing.
We have a very similar dish in western Germany (basically the same minus the zucchini) called Rievkooche (ger: Reibekuchen) also usually served with applesauce or alternatively with smoked salmon and sourcream
So slightly sacrilegious BUT I use the plain shredded potatoes meant for hash-browns when I make latkes... cuts way down on timing & usually doesn’t have as much moisture! Latkes taste just as great & makes life a little bit easier in the process

I love latkes! I used to put them in a colander to press the liquid out. Good also with carrot, sweet potato, and (gasp!) garlic.🙂
