    Greek Style Omelette | Η Ελληνική Ομελέτα
    An omelette is the best way to start your day! A Greek omelette is even better!
    In this video I am going to show you how I make one of my favorites Greek omelette (or "omelets" as they are sometimes spelled) with some fresh veggies and of course Greek feta cheese, oregano and some Greek Extra Virgin Olive oil! Ingredients are very important in every recipe, but here we can use some leftovers of some veggies that we have in the fridge and we are not going to throw them away!
    I am using 3 eggs and that makes my omelette very fulfilling and juicy! We can add one more egg and share or use two to three eggs and have it all! :)
    Lets see the ingredients here:
    3 Eggs
    1 Zucchini, shreeded
    2 - 3 Green fresh onions, sliced into rounds
    4 - 5 Cheery tomatoes, sliced
    a handfull of Greek Feta cheese, crumbled
    Salt & Pepper
    Dried Oregano
    2 tbsp of Greek Extra Virgin Olive oil
    Simple steps to success!
    1. Prepare (shred and cut) your veggies and beat the eggs (Beat the eggs lightly with a fork.) Have everything ready and then
    2. Add the Greek Extra Virgin Olive Oil to your medium hot skillet (you can use butter instead but it wont make it as Greek as we want)
    3. Add the veggies (zucchini & green fresh onions) and let them cook until the edges turn a little golden.
    4. Now it's time to add the eggs. Let the eggs sit for a minute, then use a heatproof silicone spatula or a wooden one and gently lift the cooked eggs from the edges of the pan. Tilt the pan to allow the uncooked eggs to flow to the edge of the pan. Keep the temperature low and slow when cooking the eggs so the bottom doesn’t get too brown or overcooked.
    5. Add salt, pepper, the crumbled Greek Feta Cheese and dried oregano, when the eggs begin to set. Cook for a few more seconds.
    6. Fold and serve: Fold the omelette from the sides to the center. Slide it onto a plate with the help of your spatula and top it with the cheery tomatoes and some extra oregano.
