So we opened a restaurant here in Lagos, sampled this our delta creamy coconut for days and lagosians didn't even come near it. Only about 3people did and they have been asking ever since, unfortunately we can cook for only 3people....... FYI this is the authentic coconut rice ❤️🥰

**Quick Tip** Cut time in half by using canned unsweetened cream of coconut!! 🙈 Organic choices are always better. Enhance flavor with some drops of coconut Extract (don't overuse) & coconut oil ❤️
Coconut water is good for electrolytes balance in the body.
I remember eating this as a kid, we bought from a woman hawking it in the markets , she would wrap the rice in leaves, her pepper sauce also had a coconutty flavour as well..oh good times 😊😊 bless you sisi yemmie for bringing back this memory, off to cook it..

Dear Sis..Omg in Mombasa Kenya we cook most foods with coconut.There is a local coconut grinder called a mbuzi (Swahili )The mbuzi is used to grind coconut it’s so easy to use.If someone can get it for you,you will easily enjoy cooking your coconut rice.
Does Kenya know what is coconut rice? Then u are talking about a grinder when is Nigeria that does the coconut rice ....
In order to open it easily. Soak the coconut with the shell inside water or like 3-5hrs. Make small crack with knife or hit somewhere. You'll be using your hand to open the remaining without stress

Ate this delicacy on my first trip Warri at a wedding. I initially thought it was a cooking mistake like an Overcooked rice. Because I love to explore new things I decided to go for it. I couldn’t stop having the rice till I left. Really had a great time. BTW what type of rice do you use for this.
