Yeah, the voice over would be added at the conclusion of the filming when the show has been edited down to its 60 minutes or whatever it was. It would have been scripted as well. TV is really smoke and mirrors. They have to find entertaining segments to make the show interesting. I think it would be really funny if all the contestants were better chefs than Mr. F*Ck-Off himself. Imagine sitting in a swanky restaurant where the head chef swears at all his staff as well as the customers. Not only that, but he just threw my scallops in the garbage. The producers will know a little bit about the personalities of these contestants from the get-go. They deliberately put people together who they know are going to create sparks.

This is really a great foreshadowing moment of what doomed Joy on the show. A superb chef, but she has a breaking point where she just loses all focus and gets caught up in her emotions. It's exactly what happened when she quit mid-service.

This is still the worst dinner service in Hell’s Kitchen history. Crazy how there were 20 chefs and yet a couple of incompetents prevented both brigades from serving a single dish!
Id imagine that after the "shut down" Gordon had a standby team of personal cooks come in and take care of the orders rather than turning all those guests away empty-stomached.
This has happened before on the show and they have shown that if both kitchens get kicked out, Gordon and the sous chefs will finish the orders. Also the staff you see doing dishes and what not in the back are also back up chefs.
Sometimes, service is finish by Gordon and the sous chefs. Apparently, some contestants have said that some waiters/waitresses are actually chefs and will step in and help. Not sure how true that actually is though.
They aren’t just random guests they are usually invited and told they may or may not get any food at all before the service if they wanted food they should’ve gone to a real restaurant
