This show, even though it's purposed for our entertainment, made me believe that Hell's Kitchen reveal their true character, under significant pressure. Not to mention the camera and microphones remains on for the duration of the season.

If the customer complains to the matre d, then he will go to the chef who will relay the message to the rest of the kitchen
