This Chickpea Rice just Hits Different!

    LEARN HOW TO MAKE AN UMAMI PACKED MISO CHICKPEA RICE RECIPE TODAY!
    LAY HO MA (how's it going in Cantonese)! This is one of those recipes I can sit down with a large bowl of and never get full! Join me in this episode and learn how to make a delicious miso chickpea rice recipe tonight!
    Ingredients:
    400ml canned chickpeas
    1 tsp smoked paprika
    salt and pepper
    1 tbsp avocado oil
    170g king oyster mushrooms
    90g smoked tofu
    1 1/2 cups short grain rice
    1 1/2 cups water
    1 tbsp miso paste
    4 sticks green onions
    2 tbsp soy sauce
    1 tsp dark soy sauce
    1 tbsp plantbased oyster sauce
    1 tbsp chili oil ( • Most addictive Red Chi... )
    1 tsp black vinegar
    Directions:
    1. Preheat the oven to 375F. Rinse and drain the canned chickpeas and place into a large mixing bowl. Add the smoked paprika, salt and pepper, and avocado oil. Toss to coat, then spread onto a baking tray lined with parchment paper
    2. Dice the king oyster mushrooms and smoked tofu and place into the same mixing bowl. Toss to coat using the residue seasoning. Transfer onto the baking tray with the chickpeas and spread evenly. Bake in the oven for 30mins
    3. In the meantime, add the short grain rice to a sauté pan. Rinse and drain two to three times. Then, add the water and heat on medium high. When the water begins to bubble, stir in the miso paste. Cover and cook on medium low for 15mins
    4. Chop the green onions. Make the sauce by combining the soy sauce, dark soy sauce, plantbased oyster sauce, chili oil, and black vinegar. After 15mins, turn the heat off on the rice and allow it to steam further for another 10mins
    5. Add the green onions and baked veggies to the rice. Pour in half of the sauce and give the rice a mix. Taste the rice and add more sauce if desired. Plate the rice and serve

    You can make your own "smoked tofu" by adding liquid smoke flavoring to tofu.

    Love the combination of roasted king oyster mushrooms and chickpeas that you’ve introduced us to. We have your chili oil rice on rotation and will have to try this one too. And so easy to have dinner on the table in less than 30 minutes!

    I made it last night. Really tasty!
    Two things surprised me: 1) That miso cooked with rice is an amazing combination. I only used miso in soups, although I knew I eventually needed to branch out and try it in other things. And 2) the difference in texture and intensity when chickpeas (and the mushrooms!) are roasted before added to a dish.
    I didn’t have smoked tofu, but I happened to have smoked tempeh in my fridge, so it all turned out great.

    I made this last night and it was delicious. For some reason, king oyster mushrooms are hard to find where I live, so I used a mixture of oyster and meaty fresh shiitakes. Not exactly the same texture, but it tasted great regardless. I’m a huge fan of chickpeas along with carbs of almost any kind, so this was a simple win for me. Thanks again Wil for yet another delicious and easy plant-based recipe.

    Thank you for this recipe! It was super delicious. I made it even healthier by making it with whole grain purple barley which takes a long time to cook. I didn't want to kill the miso so I just started in after it was cooked. Otherwise I followed the recipe as is. Super delicious!.

    Looks wonderful Wil! Beautifully shot. King Oyster Mushrooms are hard to source here, as well as smoked tofu, but definitely going to try to find them! Most markets only have basics, so this will require a trip to Whole Foods or something similar.
    Quick question about short grain rice…it’s a 1:1 rice to water ratio? Although I use a rice cooker usually (I cannot make rice on the stove 🤷🏼‍♀️😂) it seems that other types of rice require more water? I usually use long grain or basmati rices bc that’s what’s available. Love these Sunday morning additions to the ideas for this week! Thanks Wil! 🙏🏻🫶🏻✌🏻xx

    We lived in Discovery Bay, Hong Kong for five months last year - absolutely love Hong Kong! Traveled daily, Peng Chau, Central, Maritime, Number three dock ferry, Tung Chau, Tai Po, Mui Wo - I cried when we had to leave! come back to Vermont, US! We plan another long visit with my daughter this year- teaches close to Sha Ting. I never got used to noodles and egg for breakfast!

    Very tasty. To make this meaningful nutrition-wise, make it with gaba brown rice. It was absolutely delicious and easy.

    This looks SO good and perfect for lunchboxes and batch cooking - definitely adding it to my lunchbox recipes. I've been trying to reduce / eliminate the amount of plant-based "meats" I eat as a vegan because of how prcocessed they are, so I worry I'm not getting enough protein, but this recipe is packed with it! Thanks Wil, you're the best.

    This is a beautiful and simple dish to make. Unfortunately, there are coeliacs and the children in my family who don't like spicy dishes, I would have to alter the sauces to gluten free options. Perhaps, I may do both. Thanks for sharing.

    This looks FANTASTIC 😻😻. I love chickpeas, mushrooms, and rice! I seem to have a hard time with tofu so I'd leave out, but everything else. Yum!

      You can use any mushroom you like-cremini, button, 'portobello' caps-anything you can cut to the right size so they bake evenly.
