Hi Michele, My Mom's recipe uses a vinegar mixture (vinegar, water, sugar) and she uses distilled white vinegar. I changed the recipe a bit because for some the vinegar can be a bit strong and I find the lemon/lime juice in the fish sauce adds enough acidity. Hi, my husband is Vietnamese. My sister in law makes this dish all the time. I love it! She adds vinegar and we use the prepared fish sauce which we add chilli hot sauce & minced garlic. Then individually we drizzle over the salad per dish. Have you heard about using vinegar? I'm not sure which type.
Most people can’t eat straight fish sauce ! You need to make a fish sauce dressing! 3 table spoon fish sauce 3 table spoon sugar 3 table spoon water 3-4 cloves of chopped or crush garlic 2 lime squeeze in to dressing mix 1 Thai chili cut thin or smashed to small bits.
I was not a vegetable eater growing up, but I loved this salad when my parents made it. They also make a version using thinly sliced cucumbers. We only use cilantro in ours and no onions. I would definitely give your version a try someday. Thanks for another delicious upload, Trang!

I made the same exact recipe... the only difference was, i soaked the veggies in iced water for a crunchier taste
I made this and added a sliced yellow and red peppers, and some nice tomatoes
