How we fillet king salmon

  • Here’s a video of Dad filleting fish. He uses a file to touch up the knife before using it. (It’s a file used for chisel tooth chainsaws-sold by kevlargaffs on ebay) and the knife is a Forschner 8” butcher knife.
    .
    He scales the fish with a hose since we like to pan-fry it and eat the crispy skin. He also uses a rough-cut cedar board to help hold the fish in place.

    Thanks Akmoosie and dad. Although, I poorly filleted Salmon over the years. Today, I successfully filleted a Cooper River with leaving a clean carcass. Thanks for sharing your information. The knife recommendation made all the difference, as well as , watching dad filleting Salmon a hundred times over. Much appreciation.

    What does Dad do with the backbone? I noticed that he he whacked it a couple of times before he placed it aside.
