    l really appreciate that you know how to eat these dishes properly. Like you know which sauce goes with what and for what purpose. It’s my pet peeve when I watch reactions and someone doesn’t even dip the lumpia into the sauce or just eat the meat by itself, and not with a bite of rice. You gotta do it right. You did this right!

I hope you eventually earn enough bread to be able to travel across the country reviewing some of the best restaurants in America like Guy Fieri.     Dude. If you ever go inside a Filipino grocery - look for ube halaya.
    You can use it sparingly and mix it with other stuff to make ube stuffs. It is pure ube mixed painstakingly with condensed milk to preserve it.

    The Sisig with egg and mayo is the Manila style of Sisig. But the OG modern Sisig came from the Pampanga region. People from Pampanga would never acknowledge the Manila style sisig as sisig.
    When you make them try it they'll say "it's good, but it's not Sisig." I guess, fair enough. Doesn't matter what you call it. Good food is good food.
    Not a lot of families make Sisig at home because it's quite time consuming to make it the right way. You have to boil the pork, and then grill it. And then you brown it on a sizzling plate or a skillet til you get some of those crunchy bits at the bottom. So most people just order Sisig because there's always a place that sells Sisig anywhere in the Philippines.
    We also have another similar dish called "Dinakdakan." The authentic version uses pig brains to add a creamy component to the dish. But not all people use pig brains so you will commonly find people using mayonnaise as a substitute. Dinakdakan also uses bigger cuts of pork.

    Congrats on the plans for growth in 2024. We get that family comes first. Even if you can't travel as far as possible as soon as you'd like, hopefully you can expand to Essex, Hudson, Morris, Middlesex, Rockland. Just those few counties have plenty of top tier restaurants to keep you busy all year long.

    I would love to see you try a Filipino favorite comfort dish, an authentic "Bulalo". Yes, the one with beef bone marrow. Also, it would be interesting if you could try an authentic Filipino Lechon. You could try to get half of the lechon or 1/4 if you could find one. Lechon is what most families or companies serve during gatherings and holidays. Not lechon kawali, that's different. If you have the time, it would be nice if you can look up some real lechon. You should come to the Philippines already and try some authentic dishes. By the way, since lechon is for gatherings, If you are able to get some, it would be nice if you could share it with friends. Would you recommend filipino dishes to your friends or even bring some in a potluck?

    If you talk about Filipino cuisine, that is only part of it. Most of the things you ate are more being served during special occassion. I would like you to try ordinary dishes we have like the vegetables and fish which are healty options. You can try searching Filipino bloggers. For vegetables try laing, ginataang kalabasa at sitaw, ginisang munggo with malunggay, chopseuy. Just ask the Filipino restaurant for their vegetable dishes. For fish ask for the grilled fish or sinigang
