I have tried 4 of the soups so far. Brads was easy and good. The chowder was fantastic and my first time buying and cooking clams, and the Kimche Jjigae was good but i am still developing my palate for it. I have ingredients for the last 2 soups, looking forward to it! I would love to see a second installment of 5 ingredient soups. Lets just keep it going. For Brads soup i think cooking the pasta half way and then letting the pasta finish cooking in the stock and giving it time to all come together. The leftovers was much better than it was initially just pouring the broth over the cooked pasta. The red curry tomato soup was delicious. I was worried about it being too thin but after resting and the blender incorporating air it is thick and creamy. This soup of course goes with large crispy homemade croutons like Panera bread.

If you have more time, you can make a simple stock with dried anchovies, mushrooms and seaweed or even clams. The stock adds a buttload of umami to the soup!
I became absolutely obsessed with the dumpling soup. I make it SO often when WFH. So easy and soooo delicious. I often add whatever veg i have in the fridge too, broccolini or pak choi, so yummy.

My winners are: 1. Chris’ Clam Chowder 2. Shilpa’s Red curry Tomato Soup 3. Zaynab’s Dumpling Soup I love Zaynab’s recipe’s they’re always super easy quick and delicious! Shilpa blew my mind with that curry tomato!!! And the clam chowder is so easy and hearty I would definitely make that!
I love that every one of these can be made vegetarian/vegan with a little substitution, although the clam chowder would diverge the most and require the most makeover. Oyster mushrooms are a common vegan substitute for clams. I would use shiitakes in place of the pork chops in the kimchi jjigae. The easiest and most obvious is substituting vegetable stock/bouillon for the meat versions in the various recipes.
I happened to see this video this morning, and the family asked for soup for dinner. I made Hana’s Kimchi Jjigae and Shilpa’s Creamy Spicy Tomato Soup. The only changes I made were adding some red pepper flakes and a little fish sauce to the Kimchi Jjigae. Both soups were easy to make and very flavorful. They will both go into our regular soup rotation. Thanks for sharing!
With salt it always looks alot in those videos because they use coarse kosher salt. If you use a similar looking amount of regular or table salt it will be too much.
I liked seeing what utensils everyone chose to stir their soups with. Chris’s choice of a metal tablespoon was what drew my attention to it (bc like odd choice imo). But wooden spoons seemed to be the favorite (and is what I use too) but I liked Shilpa’s use of the spatula for rendering
i love that i can eat, without speaking. Your recipe, although it calls for canned to-matoes... its a time savor and still TOTALLY delicious (i hand make various beads daily... I noted you eat like many of us with naan, tortilla, roti! Great recipe. Thank you.❤
Potatoes and bacon chowder. Potato, bacon, evaporated milk, onion, celery. Stuff that doesn’t count. Water, Salt and pepper, herbs of your choice, paprika, flour/starch, oil. It’s a killer cold weather recipe. Make some corn muffins with creamed corn and jiffy mix, save a couple teaspoons of the condensed milk for the muffin recipe. Add an egg in as well.

I am in pantry/freezer purge mode to prep for a move and that tomato soup will now be on the menu for tomorrow. YESSS sounds so good and I just happen to have all the ingredients! I eat a healing diet to reverse chronic illness so my wife is always confused why I watch a cooking show with ingredients I choose not to eat but I still get so much inspiration! Like red curry paste in tomato soup DUH bomb.

Did you make your own broth or use store bought broth for brads recipe? The difference is night and day.

mushroom broth is very good as a meat broth substitute cause it’s so flavourful
you would also need something to replace the bonito flakes in the miso soup
