Tamale pie never had it with Chorizo. I normally make with beef or pork if not shredded chicken. Looks good I'll have to make it. I'm from Texas I've made Tamales with deer, brisket, beef, pork, chicken, bean & cheese, chicken & cheese bean & jalapeno, chicken & green salsa. I've usually made them for the holidays for the family everyone would come to my mother's house and I'd make at least 30-40 dozens. Enjoy.

We love tamale pie, Im sure there are a million ways to make it, we do ours like a cobbler so the topping is cooked with the filling and the topping rises to the top, you can also add chopped jalapeño and cheese to the bread mixture. Yummmmm, another win!

  • @MeighanT

Our tamale pie is a layered casserole (much like a lasagna) that uses corn tortillas instead of noodles. The meat sauce is hamburger, taco seasoning, onion, garlic, crushed tomatoes, sliced black olives, and frozen corn. You could add peppers or black beans if desired. It is layered with melty cheese, baked until bubbly, and then served with avocado & sour cream.

So glad that I am making enchilada pie tonight. That tamale pie looks good and I've never used pork and chorizo as a center. But we always cook our corn meal with fresh garlic in it for the outsides of the pie and make a hole in the middle to put our meaty ingredients into. Then I just spread a layer on top to close it up and we have a pie. But then my husband will make just the cornmeal and garlic and then let it set up and get cool slice it all up and then fry it like it's crispy a little bit of salt and eat it like it's practically a potato chip oh my it's so good. God bless you and yours. Love, jenwhite 🥰 ❤ 💖

How about Cherry pie! My mom makes a cream cheese Cherry pie that is easy and soooo yummy!!
    Recipe below:
    Graham cracker crust
Can of Cherry pie filling (or blue Berry is excellent, too)
Pkg cream cheese (8 Oz softened)
I 14 Oz can sweetened condensed milk.
    1 tsp vanilla
Beat cream cheese until light and fluffy. Gradually stir in sweetened condensed milk and continue mixing until smooth and combined. Add lemon juice and vanilla; mix well.
Pour over crust, refrigerate for @ least 2 hours….or prep in the AM and finish just before dessert by spooning the cherries over the top in a single layer (mom always did them one at a time to make it easier to serve and pretty)
    Cut serve and mmmmmmmm!

I love the music you are selecting for these videos! I have a version of meatless Frito[tm] pie that is similar, and super quick, perhaps for the RV. I call it Blue Frito Pie, crushed blue corn chips for the bottom, then can black beans, chopped onions, green salsa, white cheddar, top with more cheese, pico de gallo, bake or microwave to heat (it is already cooked), add more cold salsa on top with favorite cream, I use Greek yogurt or El Salvadoran Creme. For vegetarian friends, soyrizo is surprisingly super delicious.

Oh YES. You had me with the cottage pie and the Irish potato pie and now with the tamale pie I'm literally DROOLING! I have a DELICIOUS savory pie recipe that's called beef and cheese crescent pie. If you or anyone else want to try the recipe, and oh my you SHOULD lol. Here it is:
    **BEEF AND CHEESE CRESCENT PIE**
    1 1/4 lb ground beef
1/2 a lg green pepper finely minced
1/2 cup minced onion or 4 tsp dried minced onion
    8oz can tomato sauce
4oz fresh chopped or canned mushrooms (can substitute with black olives too if preferred)
8oz fresh cut green beans or canned
    1/2 tsp cumin seed
    1/2 tsp garlic salt
    1/2 tsp salt
1 8oz can Pillsbury crescent rolls
    1 lg egg slightly beaten
2 cups shredded cheddar cheese- divided
    Paprika for garnish
Preheat oven to 375°. Brown meat with onion, green pepper & if doing fresh mushrooms vs canned add as well. Drain fat. Pour in the tomato sauce, mushrooms- if doing canned (or black olives), the green beans, cumin, garlic salt, & salt. Stir and heat through, leave to simmer while preparing the crust. Note: Keep the crescent rolls in the fridge until ready to make the crust, do crust right before ready to add the next 2 layers (so that it does not get room temp or it will be soggy after bake vs crisp/flakey). Press the rolls over the bottom and sides of a 9" pie plate (pressing down to seal in the triangle perforations in the dough) Combine the beaten egg with 1 cup of the shredded cheese. Spread the egg/cheese mixture over bottom of crust. Pour the hot beef mixture over the cheese mixture. Spread the remaining 1 cup of cheese over the top. Note: I usually do an additional 1/4 to 1/2 cup of cheese on the top too. We like it a little extra cheesy! Lastly, sprinkle the paprika over the cheese. (The paprika will make the cheese a nice golden color after baking, and add more depth of flavor). Bake the pie for 25 to 30 minutes until cheese is fully melted and bubbly. If you like your cheese to get a bit crispy, turn the broiler on high and watch carefully. Broil approx 1 to 1 1/2 minutes. Remove pie from oven & let stand for 5- 7 minutes to firm/set before serving. This recipe serves 4 to 5. Note: I double the recipe and make 2 pies which will serve 8 to 10, or have leftovers the next day :)
The recipe came from Pillsbury cookbook a 1st place winner in their savory pie catagory. My kids said "this one is a keeper, make it again". Which it's rare if they ALL collectively say that for a recipe. I hope you give it a try and let me know! FYI I'm not a big mushroom eater unless Morrell's, so i do it with 4oz can of sliced black olives instead. Can omit both and just add more green beans too. 🥧😋
Oh, you can freeze it. Just bake it, then freeze, & just put it in oven to reheat from frozen @ 325° for about 45 minutes. 😀
