    I just made this tonight. So great and easy! I just happened to have all the ingredients. But I halved the recipe and that was enough for 4 servings. I think next time I may add a pinch of red pepper flakes and some oregano just for fun.

    I love love your Greek recipes. I don’t know anything about Greek cooking but I have loved learning about Greek cooking from you. I love Kalamata olives and I love sheep‘s milk feta so I know I’m going to love this!

      Would have to get an onion or sub a yellow one and the red peppers. I even have capers, and I don't like capers!

    I have everything I need to make this, and I'm going to add a package of cubed and smoked salmon that I bought from Costco. The box of salmon came with 4 individual packages of the cubed fish, and I think one of those will be the perfect amount to add to this recipe. Thanx so much for this. Looks so delicious !     I love your recipes....my best friend is Greek so I'm familiar with the food. I just wish you would speak slowly in the beginning far too fast plus not everyone speaks Greek. Thank you for introducing me to different Greek foods I haven't had. ❤️

      I didn't have peas, roasted red peppers, and feta cheese. Instead, I used tomatoes and dehydrated chanterelle mushrooms along with the other ingredientsthat you used. I had this with an egg and it was a quick and delicious meal. Once again, thank you!

    I love this recipe! However, right now I'm on a mint roll, so ... along with dried Greek oregano I will add dried mint, too.
    ETA (8 months later): Maybe instead of salt I’ll add 2 or 3 rinsed chopped anchovies to the oil and let them sort of dissolve before I add the onions. Why? Because anchovies add so much umami, because I love them, and because this orzo dish is so much like the pasta puttanesca of Italian fame that it calls for the little fishes that sleep in every pantry worth its salt! If I weren’t using a sheep’s milk feta, it might still need some salt, but IMO the salt in a good sheep’s milk feta should more than compensate when combined with the briny olives, capers, and anchovies! I love to add fresh parsley; just give it a good chop and sprinkle on top to serve 😊

    Looks wonderful, can hardly wait to try. Questions -- How would this be the next day -- cold? Would the orzo continue to absorb the stock? Could it be re-heated on the stove-top?

      It's a matter of taste, but I like eating pasta cold, so it works for me!
      Yes, the orzo continues to absorb the stock. You can reheat it but the texture won't be as good.

    I do have a question if you don’t mind?
    I watch a lot of vlogs by chefs like yourself and whenever “roasted red peppers” are used in a recipe, it’s never mentioned if the roasted red peppers are the more typical jarred ones with vinegar and oil or just jarred in oil, preferably olive oil? The ones that are in only oil are pretty much impossible to find because of shelf life and not really preserved with vinegar. What type are yours you use if you don’t mind me asking…just oil or oil vinegar?
