Oh Kara! What have you done to me. I made these Snickerdoodles just now, out of the oven. A whole new level of goodness with milled flour, good quality grass fed butter and my fun new Ankershum. The cookies are tasty, chewy, soo good. I’m actually on a diet so I have to contain myself from not eating all the goodies. I have your cookbook as well and looking for my next recipe for tomorrow. I LOVE your cookbook and I will never, ever go back to store bought flour. Thank you for being the best teacher.

I have not used your recipe yet but I have made Pumpkin snickerdoodles with soft wheat fresh milled flour. They are sooo good! I haven’t gone back to regular snickerdoodles since.

"Historically, and confirmed with recent tests, we see a bell-curve range of Lead results of: Lower Bound: 0 - 99 ppb (< 0.1 ppm) Mid Bound: 100 - 299 ppb (0.1 - 0.299 ppm) Upper Bound: 300 - 399 ppb (0.3 - 0.399 ppm) Given CODEX Lead standards of 1 ppm (table salt) and 2 ppm (natural, unrefined sea salts), Baja Gold not only meets these standards, but exceeds them by a minimum of 2x, and often 4-8x." Their most recent test in Sept 2024 shows 106 ppb (.106ppm). What salt did you end up switching to?
Einkorn is very soft and tender, and has very small bran pieces, so it works great in low moisture recipes. Higher moisture recipes like muffins and breads, the bran softens from the moisture, and isn't as noticeable as it may be in a low hydration recipe.
I cant find your pizza dough recipe at the moment but i remember you said you used kamut, can it be made entirely out of soft white wheat or was that hard white wheat?? I think im a Grains in small places junky!! 😅
I was wondering if you mill dent corn for grits, cornbread etc. I skimmed your videos and didn’t see any videos. Is that something you’d be interested in doing?
I feel your pain! I hope these snickerdoodles are a little more forgiving! :) I have found that the cheaper store brand butters are higher in moisture than in the past, I recommend getting a European or Irish style butter, or a Grass Fed butter for cookies. I have had better success with the lower moisture butters. OR increase the amount of flour to offset the higher moisture content. That may help a bit! :) Happy Baking!
Good morning. I'm a recent watcher of your channel. I just got a grain mill and I'm trying to find recipes and get ideas and techniques, because i know fresh milled is a different to work with. I was wondering if you have any advice for me. My 1 year old is extremely allergic to dairy. So I've been working on our journey of trying to find alternatives to dairy milk and buttee in recipes, and now im adding fresh milled on top of it lol. Any advice?
I'm so glad you found my channel! I love helping people learn to bake with fresh milled flour. It is a journey! You can sub water for milk and oil for butter in all my bread recipes that call for that. For cookies, you can sub refined coconut oil for butter. For muffins, you can sub any milk substitution plus 1 TBSP vinegar for the dairy, and use all oil instead of oil and butter. I hope that helps! Happy Baking!

Growing up in the 60s and 70s, my mom always used the butter wrapper and greased the tray or cake pan with the butter residue.
