Hello, yes the syrups are with sugar. You may replace the milk with any non-dairy milk substitutes. I will be publishing a video on using Almond Milk as substitute on Thursday 28th October. Do check it out. :-)

1:5 means 1 to 5 ratio. Meaning 1 part coffee to 5 or 8 parts water. A simple recipe is 100g of coffee coarsely ground ( filter ground) to 800g or 800 ml of water. Bloom your 100g coffee in 100g (100 ml) of boiling water for 45 seconds, then add 700g ( 700 ml) of cold water and leave for 18 - 20 hours to steep. If you really want to get nerdy about it, add a pinch of salt to the mix to further enhance the flavor and sweetness

You may use evaporated milk which has a longer shelf life. Sterilised milk like Bear Brand will also work.
