Godoink was always so hard for me to learn but your video inspired me to work past these dark struggles against a vast world. But hey I guess sucking at something is the first step to being good at it.
Just a tip for weight painting: In object mode you can select your amature and then shift select your model. If you switch now into weight paint mode you will be able to select bones with (alt+left mouseclick) and weight paint them as you like. If you can't see the bones go the amature-tab in the amature object. Under the section View Display (or just display) you can tick a box to have the bones always be displayed in front.
Critical step missing in the tutorial: Before pressing Symmetrize, you MUST NAME YOUR BONES (f2 for the selected). For Symmetrize to work, they need to end in .L, .l (for left-side bones) or .R, .r for right-sided bones. Missing this step sent me down a 2-hour long rabbit hole. Also, those bone names are keyed to the frames and vertex groups that a game engine needs to run them.

What i want to know is what if i wanted to add more animations to my model. Do i go back into the blender file, create the new animations, then export the glb file over the current glb file in godot? Would that work?

You have to name your bones before apply SYMMETRIZE

Didn't know about the Non-Linear Animation viewport at all, that clears so many problems I was worrying about when importing to Godoink from Blender
