    i've tried the recipe.. so far this is the best pandan cake with palm sugar i've made!
    Thank u for the wonderful recipe.
    Note: the frosting easily melt and hard to set if u want to sell it.
    i suggest either use little coconut milk in the frosting or use coconut extract as substitute.

    Great flavor mix. We use pandan leaves when we make rice for the fragrance. Mixing them with coconut in a cake must be incredible!

    I just came across your beautiful Pandan coconut cake.
    What attracted most was the amount of sugar you use as compared to all the other bakers yours was so much less.
    Have been looking high n Low for a an icing that has has very little sugar . Will definitely try this recipe

      Pandan don't have particular taste but very fragrant and natural green. Match with coconut taste.

      @@HowTasty yep the goal isn't to get the taste but the colour and smell of pandan. In fact if you put too much pandan in the cake it may taste bitter/grassy
      ps: pandan is called screwpine leaves, you can find it dried in some places eg Chinese shops i think

      I think it smells similar to vanilla. That's why call it the vanilla of Southeast Asia. Smell is a big component of taste so you might think it "tastes" like that, too.
      You can get frozen leaves or (whole or ground leaves) in some Asian grocery stores. It goes by different names - Thai people call it Bai Toey. It makes a great tea when boiled with chopped lemongrass, too.

      Wow, all these wonderful baking ladies already explained so well, they saved me all the explaining work. I have a pandan plant in my garden. I can just harvest then as and when I want. In fact, sometimes I put them in rice pot to give my rice some pandan fragrant. The plant has such beauty in terms of fragrant and usage. It also used as a repellant to prevent mosquitos and pest

    Ohh we have similar cake like this which is trending in Indonesian now called “Klepon Cake” it’s a cake inspires from our traditional sweet made of glutinous rice powder, pandan, palm sugar n coconut. I can imagine the taste of your cake, love it.

    Hey, Fiona. I made this pandan cake today and it turned out well. Everyone in my family loved it. Thank you for the recipe. You should try making the cake with pandan pudding. I tried to look for the Hoen Kwe green pea flour but I couldn't get here. Anyway, the cake with coconut cream and whipped cream frosting was delicious too. Thanks again.

    This is so beautiful. Where I grew up, pandan was abundant. Here where I live now, it’s no where to be found. But I loved watching your baking demonstration, it’s so calming and the green colour of the pandan is mesmerizing. I just hope I had some to try.

      Tammie Martinez if u drink the extract, it tastes bitter. It's normal because it's a leaf. Nobody drink it tho 😁
      For me, I like the smell & taste when it's used in making cake & kuih. Usually, I use it to make sweet desserts 😊

      Yes streaming is great too 👍 just be careful of the water vapour that will fall/drip into the batter when you steam

      @@miameliaresti8969 No baking powder or soda required. The key is the egg white meringue which is the reason that the cake rises. So make sure the meringue reached stiff peaks

      I have the plant in my garden, Alina. Pandan leaves has multi purpose. Not only it can be used in cakes, it can also be used in rice so that it's gives the rice the pandan fragrant and green colour. It can also used as pest and mosquito repellant too. It's very popular in South East Asia

    Could I replace real pandan leaves with pandan extract ? If so what would the equivalent be ?

      Yes you can, although the fresh pandan leaves gives a very natural fragrant. The paste will be very green, so just add a tsp at a time, apart from the tsp mentioned, do not over add, it will turn up too artificial. Hope this helps

      Hi dear. I believe coconut extract and coconut cream are the same thing. However, extract may have a higher fat to produce a more stable frosting. Not to worry, you can try the cream version, maybe you can add 2-3 tbsp into normal whipping cream to make the frosting. This will be an alternative for you in case your cream doesn't form stiff
      Yes you can use 7 inch pan, but you may get only 3 layers 😊

    Hi Fiona. Oh my mouth is truly watering, this looks absolutely delicious, but sadly i won't be able to try this one due to the lack of 3 ingredients here in the UK.. I am curious as someone else has mentioned what pandan leaves taste like. I would like to ask if at some point you would consider showing us a version of Belgian buns. There are a few recipes for these buns on You tube but not that many. I love them and would love to try your recipe if you have one. Take care my friend...sending hugs

      others have said that cooconut sugar can be found in health food shops. maybe coconut cream too, because vegans use it to replace whipped cream

      You can find all of these ingredients in the UK, I live in London and just go to local oriental stores :) More common than u think

      Hi dear. Unfortunately I don't have. Maybe I can put this on the request list. So you do have pandan leaves in India? I was hesitate to make the eggless one thinking the pandan is not available

      Yes you can, but it's not a pandan cake. Sub with milk (recommended) or water
