Pandan Cake with Gula Melaka Buttercream

  • This is my most popular cake recipe so far. The cake is full of Pandan fragrance and it is paired perfectly with the Gula Melaka Buttercream. It is a light buttercream using a Swiss Meringue Buttercream recipe.

    Notes:
    Please note that the baking temperature and timing provided are what works for my oven and should also be regarded as a guide only. It may not work for your oven. Every oven behaves a little differently, so please adjust accordingly for your oven.
    Other recommended methods:
    170C (top and bottom heat) for 90 minutes - water bath.
    150C (top and bottom heat) for 60 minutes - dry bake.

    Hello from London. Thanks so much for sharing a detailed recipe of your Pandan cake.
    I also read your blog about this Pandan cake.
    One thing I learned is the waterbath technique, which is very effective for having a soft,
    Moist and pillowy chiffon cake. My cakes are no longer deflating.☺️

    Hi Paws, would the Swiss meringue buttercream work if I do not add the gula melaka syrup? I noticed your ratio of sugar to whites is less compared to western recipes that do 2:1. Thank you.

    Hi. Do u got extra buttercream from this recipe or it yield just nice to cover the cake? May i know if i can omit or substitute cream of tartar since i don't have one?And can i use coconut milk?

      Hi, thank you for watching. Yes, there are a little bit of buttercream left. You can substitute cream of tartar with lemon juice or white vinegar as I mentioned in my recipe. Yes, you can replace milk with coconut milk. Thanks

    Hi I have made a bigger batch of the meringue buttercream and stored in the refrigerator. After back to room temperature still very firm , do you think I can still add some pandan juice or coconut milk and whip to soften the buttercream? Pls advise

      Sorry for late response. It will become soft once it is back to room temperature but not melting or too soft. Do not required to add anything. But, you can beat a little bit with machine to get the smooth texture. If you want to make pandan buttercream, then it is fine to add thick pandan juice.

      Hi, thanks for watching. No, I didn't brush the side as I prefer the cake stick to the side and hold the cake. So it the cake will not sink after baking.

    I don't have a stand mixer. Can i still get perfect texture of the buttercream by using normal electric hand mixer?

    Is this 6 inch cake? Can I put baking paper at the side of my pan?

      Hi, yes it is 6 inch round cake. Please find the full details in the recipe:

      It is not advisable to line the side of the pan. This will make the cake sink alot during cooling.

    This cake is beautiful and the recipe is top notch. I got a few suggestions - the cake is too tall which could be circumvent by baking the cake in a larger diameter round baking pan. The decorations are lacking green colour - could have save some icing and put green pandan paste for the green colour piping. Or simply cut some pandan leaves into petals like leaves.

    I made this one today.. dor my sister birthday.. the cake is very nice.. not to sweet.. but the meringue is very sweet, may i know how to reduce the sweetness in the buttercream that is already made? Thank you.. 😊😊

      Thanks for watching and trying this recipe. The only way is to cut down the sugar in meringue for the buttercream. But, you cannot cut down by a lot as it will affect the consistency of the buttercream.

    Appreciate if you can kindly provide the measurement in cup : 110g cake flour or all purposed flour (in cup) 54g corn oil or any vegetable oil
    20g fresh milk
    52g homemade pandan juice 90g caster sugar or fine sugar 100g gula melaka, crushed or chopped 160g caster sugar

    Is it possible to subs pandan juice with paste//flavouring bought from stores? If yes do i need to add extra liquid to make up for the volume lost from not using the juice, thank you.

      Hi, thanks for watching. Actually we have heat up the egg white with sugar but not cook. It should be safe as long as your egg is fresh. If you are concerned please use pasteurized eggs.

      Hi, sorry for late response. Yes, you can. But, your cake will be short. You may want to increase the recipe to 8 eggs to yield two 7" round pan.

      Hi, thank you for watching. To be honest, I am not sure. It is very much depend on your room temperature at your place. I never left it outside in room temperature like warm weather here for too long.

    Hello. Any idea how many grams of egg whites ? Cause I have a batch of egg whites. Im unsure how many grams does 6 eggs gives 🥺

      Hi, thanks for watching. Please make sure you use very fresh egg. We have been eating all this while and there has never been any problems. If you are worried, you can use posterised egg. This is Swiss Meringue Buttercream that has been widely used.

    Hi. We tried your recipe. The cake came out well but the icing was a failure.
    The water from the gula melaka syrup kept oozing out and ruined the whole assembly.
    I think there may be a step you did not disclose.
    Very frustrating.

      Hi, Thanks for watching. Sorry, I did not measure each layer. The height of the cake round pan is around 3" . The total height of the cake after icing is around 5.5"
