Just wanted to come on here and give a heartfelt thank you for these cooking videos. My mom passed recently, and I spent so much time putting off learning her recipes by heart because I just kept taking for granted that we had all this time. She was Mexican and Puerto Rican but all she cooked was Puerto Rican food. I just made this and almost teared up. It tastes just like her cooking. Thank you so much for giving me back a little piece of my mom. 🙏

There are many types of olives though and how they are preserved changes things up. I personally like black olives and that might be because the ones I get are often preserved in white vinegar which has a nice taste to it.
Exactly right. I love olives too, unfortunately I have to put them on the side though, my husband & boys will straight up refuse to eat them... if they see them (doesn't stop me from using a little of the brine in the cooking- just another "something's missing" they'll have to ask about when they are older)
I have used your recipes in the past (carne guisada and pollo guisada)...the dishes came out perfect...I never used to cook with cumin...and the smell of it made me a little nervous to add it to my food...but you opened up a new world of flavor for me...and when combined with the wonderful aroma of my sofrito, adobo and oregano...it's smells just as amazing as it tastes! I'm gonna be making this recipe tonight and am confident it will taste wonderful! Thanks for sharing.

If “authentic” meant everyone did it the exact same way, then everyone’s food would taste the same. In every cultural there are differences from Cook to cook. I learned how to make this from Aida on TH-cam and I love it! If your family make theirs differently that’s fine this is her recipe and it’s FANTASTIC!! Plus if you know how to make it why are you watching.I don’t look up dishes I can cook, since I don’t like wasting my time. I made this today for Sunday dinner. It was awesome!!! Not adding tomato sauce did result in less mushy rice, like my husband likes it. The rice was so good. I used boneless, skinless chicken thighs. The chicken was so tender and flavorful. Thanks for your videos! Next is the beef stew. :)
