i Usually use a standard French chef's knife, but I'm staying with someone who only has a Chinese cleaver, and I'm starting to become a convert. It feels so solid, and it definitely makes mincing fun.
I've never used a Chinese cleaver but see so many chefs cook with it! My favorite are Global which are Japanese, but I also love JA Henckels which are German. I used German knives all my life until I got hooked on the Japanese ones! Use whatever inspires you to cook ☺️
@@LeahsPaladar I'm pretty simple. I like Victorinox knives, because they're cheap, sharp, comfortable, and the rough, molded plastic handle never loses its grip--even when it's covered in oil. They're also alot like the shared knives I've seen in pro kitchens that prep cooks use. Gotta trust a knife that has a 9-5 job.
