That's some good eating right there. We do something similar, but use heavy foil to cook the trout over the fire. I like to leave the head on and then just remove the gills and guts, add seasoning and a small amount of butter flavor Crisco, seal up the edges and grill/steam until the meat flakes off the bones. When done, burn off some of the residue and pack out the foil. Your pan method make it easier to monitor and flip, but both methods will work.
i love outdoor cooking over fire. The butter is a key, as the not over cook. Smoke lake trout is fine to, with some attention it is possible to make it over coal and andfull of wet hardwood in a can and under aluminium foil.
You know a camping recipe is worth learning if it looks like a 5 star takeaway by the end. Will definitely keep this one in mind!

That sounds really good! Your method saves at least 2-3lbs from the pack though

There is nothing better than cooking over the fire! I haven't tried backcountry smoked fish yet, but that sounds like a great idea!
