►A goan sweet dish made with rice, jaggery, coconut and flavoured with cardamom, a much-loved goan delicacy
Ingredients:
375 gms raw red rice
300 gms fresh coconut (grated)
500gms jaggery
1 tsp. cardamom powder
1 Tbsp. cashew nuts (broken)
salt to taste
water for grinding

Looks great. However I would like to filter jaggery syrup to discard impurities. Possible? If yes, at which stage and how to proceed as the jaggery is otherwise ground with coconut? Does it taste different from Goan dodel (pl excuse typo?
Hi, jaggery which I used did not require to be filtered, if you would like to use filtered jaggery syrup then add the jaggery syrup to the ground rice and coconut paste and follow the recipe, but don't make the syrup too thin, mandos and dodol are different delicacies and the taste different 😊

a veritable epitome of a super-healthy cake, i must say! But also looking too good to be believed :-) ! By saying super-healthy, i mean that there is not even baking soda/powder used, an ingredient which is commonly used in even eggless cakes. Your cake embodies what in my words is called as the "MESOB-free" cake: M(maida/milk), E(Eggs), S(sugar/salt), O(Oven), B(Baking soda/powder)-free! If I were a judge on a culinary show/contest, I would, without a second thought, judge your recipe as the best, or ideally that is what any judge OUGHT TO BE DOING! Moreover, if every housewife(or for that matter - I may hasten to add just to be on the safe side to avoid a feminist backlash - others too, including husband ! :-)) learns to cook such desserts for birthdays, it would not only serve as a healthy yet beautiful treat but also introduce/teach our glorious culinary culture to our children, apart from greatly impressing the guests!

By the way, this sweet is made by all the cultures of the Konkan coast, not just the Goans. The Karwaris, the Maharashtrians, the Mangaloreans and the Keralites ... they all have this combination of sweet. Some steam it, some cook it over the stove on a slow fire, some also cook it with coal fire under and on top.
